I'm going to try to make a low-fat " tuna salad " that doesn't taste like ass. ;-) (Vegenaise is SO SO yummy, and helped me become a vegan the first time, but it's 100% fat, or nearly so, and it's a major ingredient in my tempeh tuna salad.) Because I have a really simple one that I use in my chickpea " tuna salad " that I think is wonderful and would be happy to share for you to try in your tempeh " tuna salad. The one I was going to try first I found on the McDougall board: TOFU MAYO One 12-oz block of tofu (I used Mori-Nu silken firm in the tetra box) Juice of 1/2 lemon 1.5 tsp garlic powder 1.5 tsp onion powder 2-2.5 tsp sea salt (finely ground, almost like dust!) Use table salt if no SS. 1 tsp prepared mustard 1/4 tsp cayenne pepper (may omit if you don't like cayenne, but its mild) Put everything into the food processor and whirl away until creamy smooth like mayonnaise shoud be. Here's mine: TOFU MAYO One 12.3 oz box of reduced fat extra firm silken tofu 2 Tablespoons cider vinegar (or lemon juice) 1 and 1/8 teaspoons salt (it will taste too salty if you taste it immediately after mixing but just right within about five minutes) 1/2 teaspoon dry ground mustard 1/8 teaspoon white pepper Blend all ingredients in the food processor until smooth. Store up to 2 weeks in the refrigerator. (I'm telling you, this stuff is so tasty I have to restrain myself from sitting and eating it like some kind of tart pudding.) Maybe you can play around with your recipe and mine in combination and come up with something even better than either of them!
