Leah, you are so right about black eyed peas and the new years day

tradition! I have eaten black eyed peas on new year's day ever since I

can remember...and when I got old enough to stay up late, they would be

served at the parties to be eaten after midnight. And it's not just for

financial success, it's for general good luck during the coming year!

Who wants to take a chance with that by not eating them!!!??? LOL!

I think I'm correct on this when I say that another name for black-eyed

peas is " purple-hulled " peas. I've heard that a lot when people are

growing them, and that always involves a lot of shelling to eat them

fresh. Seems like the shells are never really tender enough to eat.

Probably I should have googled it first--oh well!

I do not think I have ever made a comment to this list ---- but......

just in case you did not know it --(maybe posted and I missed it)--

Black-Eyed Peas are a New Year's Day tradition in the southern US-- a

must eat -- or have finical problems all year--- ;-)

 

I do enjoy the list and am working on changing life style- to a much

better healthy one -- it's a slow going process.

 

I do not have time to read all the entries but read the ones I can when I

have a chance. Thanks for all the goodies and information.

I make a really simple black-eyed pea soup with greens (I usually use

spinach because it's easy to just buy a frozen bag of it and toss it

in.) It tastes a LOT like the soup my grandmother used to make (hers

had pig in it.)

 

Smoky Black-eyed Peas with Greens

 

Ingredients

 

1 large onion, chopped

1 16-oz pkg frozen black eyed peas or 8 oz dried black-eyed peas

1 16-oz pkg frozen mustard greens, collards or spinach (or equivalent

fresh greens)

4 cups water (or bean cooking broth if you separately pre-cook the beans)

2 tsp hot pepper sauce

salt and pepper to taste

either 1 8-oz pkg baked, seasoned, smoked tofu, cubed OR 1 tsp liquid smoke

 

In a soup pot, saute the onion until browned. Stir in peas, greens,

tofu or liquid smoke, water, hot sauce, salt and pepper. Simmer a few

minutes for pre-cooked beans and greens (can substitute 2 cans of

black-eyed peas for convenience) or about 25 minutes for frozen peas.

Adjust seasonings if desired. Serve immediately.
