Hi All,

 

I am newly vegan and I'm looking for any great, healthy recipes. I'm

thrilled to have found this group. I'm going to be searching for a

great vegan bday cake recipe for my daughter's 1st bday. Any

suggestions or recommendations?

I know a wonderful vegan chocolate cake and chocolate frosting recipe

but they're *definitely* not low-fat.

I made the Wacky chocolate cake recipe with the following

modifications, I replaced the oil with applesauce and the sugar with

Splenda. Instead of using the chocolate frosting recipe, I made a

ganache (melt 3/4 cup dark chocolate chips with 1/4 cup vanilla

soymilk) and spread it on the warm cake. It was a chocolate lovers

delight!

Cool! It is a pretty great site. :-)

 

And I can vouch for the tastiness of that particular cake because I

made it for my birthday. My husband didn't like it but he is the king

of pickiness. And I made the mistake of telling him it was vegan

*before* he tasted it. LOL The only vegan things I can get him to eat

are when I don't tell him until after he's said he likes it.

Your best bet would be to go to drmcdougall.com and to the free monthly newsletter you get a load of useful, important information and Mary McDougall provides 5 or 6 great easy to make, non fat, great vegan recipes each month. The best part is that it is free. This is by far the best web site for vegans. You can write to Mary McDougall and she might suggest several great birthday cake recipes. I second Scott's advice. I've been receiving Dr. McDougall's newsletters for years. The recipes from there were the original basis for my recipe collection. He and Mary were on the cutting edge of the low-fat vegan lifestyle health advantage. One note: Some of Mary's recipes are too bland for our taste. So I always make them according to the recipe the first time. Then make a notation on the ones that I need to up the spices. Admitedly, she is trying to appeal to the average taste of people. Some people like less flavor, others more. Like any recipe, feel free to make adjustments to suit your individual taste. Also Susan's blog has great recipes too: http://blog.fatfreevegan.com/.

I've reached the point of always doubling the spices in Mary

McDougall's recipes.

 

The recipes in Dr. Esselstyn's book are nice.

 

Everything I've tried at http://www.vegsource.com/marla/ has been

wonderful.

 

You can always convert recipes to being fatfree. I made a nice taco

salad last night and just left out the oil (never missed it).

Likewise, it isn't necessary to saute onions, etc. in oil; one can use

water, veggie broth, or some other liquid.
