It's simple enough to take them home, wash them off, and pop them in the oven for an hour, then remove the skins and seeds when cooled. After that I lay them flat on a cookie sheet and into the freezer until firm, then take a ziplock freezer bag and drop them in. Between each pepper I place circles of plastic that I recycled from container lids, like raisin and oatmeal boxes. This prevents the peppers (or veggie burgers) from sticking to each other so when I need one I can easily grab just one. And if you can't find fresh red peppers at a decent price, buy the roasted ones in jars. They are about half that here right now and if I luck into them in the discount bin at the co-op they are fifty cents. (And we don't even have local produce here yet because we're so far north. Maybe I should quit eating bell peppers . . . Pretty much any fresh produce I can get right now says Mexico on the label except for apples which are coming here from Washington state. I could just eat all my veggies from frozen (I already eat a bunch that way) though the bags don't say at all where the vegetables come from, so that's probably not any better of a choice. I didn't use to eat any vegetables - just beans and rice. I could go back to that, I guess. Next year my choices will be a little easier because we are working on putting together a community garden plot. In fact, I'm walking over tomorrow for a meeting at the site.
