With red bell peppers costing over $5 a pound in my part on NJ, I

usually check the day-old shelves for them, when a package of 6 peppers

that are fine except for some wrinkly skin goes for 99 cents. It's

simple enough to take them home, wash them off, and pop them in the oven

for an hour, then remove the skins and seeds when cooled.

 

After that I lay them flat on a cookie sheet and into the freezer until

firm, then take a ziplock freezer bag and drop them in. Between each

pepper I place circles of plastic that I recycled from container lids,

like raisin and oatmeal boxes. This prevents the peppers (or veggie

burgers) from sticking to each other so when I need one I can easily

grab just one.

 

And if you can't find fresh red peppers at a decent price, buy the

roasted ones in jars. Just be sure to rinse the pepper off a bit before

using, or else the brine taste will carry over into your dish.

Ouch! They are about half that here right now and if I luck into them

in the discount bin at the co-op they are fifty cents. (And we don't

even have local produce here yet because we're so far north. These are

organic red bells from Mexico right now.)

I trust " organic " from Mexico and central/south America about as much

as I trust Heparin or dog food from China

Well, it's all that's available here. Maybe I should quit eating bell

peppers . . .

 

Pretty much any fresh produce I can get right now says Mexico on the

label except for apples which are coming here from Washington state. I

could just eat all my veggies from frozen (I already eat a bunch that

way) though the bags don't say at all where the vegetables come from,

so that's probably not any better of a choice. I didn't use to eat any

vegetables - just beans and rice. I could go back to that, I guess.

 

Next year my choices will be a little easier because we are working on

putting together a community garden plot. In fact, I'm walking over

tomorrow for a meeting at the site.
