I don't know how much of the fat stays with the okara and how much

gets released into the soymilk, but it couldn't have more fat than the

soybeans themselves. Since 80-100 grams of dried soybeans (I'm using

the measures my machine goes by to calculate) has about 16-20 grams of

fat and makes about a quart and a half of soymilk, I would assume that

a cup of homemade soymilk has, at most, 3.33 g of fat, possibly fewer.

Hope this is at all helpful.

thanks! mine uses 70 - 95g of soybeans so it's close. I haven't

figured out what to do with the pulp yet, they do have a biscuit

recipe in book but haven't tried it yet...

Hi Nancy,

The okara (pulp) is really one of the best parts of making soymilk. I

love to make " crab " cakes out of it. That recipe and several others

I've made are on my site: www.fatfreevegan.com --just put " okara " in

the search box.

Also, I just found a blog devoted entirely to okara! It's

http://okaramountain.blogspot.com/ --not a vegan blog, but vegetarian.

Lots of interesting (but decadent) looking recipes there!
