Spicy Collards (or Silverbeet) and Black-Eyed Pea Soup - results!

Well, as promised I’m reporting back on the results of making Susan’s Spicy Collards and Black-Eyed Pea Soup, but using Silverbeet (a.k.a. Swiss Chard) rather than collard greens. Since I’ve never eaten collard greens (or silverbeet before today) I can’t say whether it tastes the same, but I can say this soup was yummy! I didn’t add the 1 tablespoon of hot sauce because (a) I didn’t have any and (b) I don’t particularly care for it. I did use smoked paprika, but I didn’t have fire roasted tomatoes, so I used regular and added a bit of liquid smoke.

 

I really enjoyed this soup! Thanks, Susan, for another winning recipe. I’m finding I’m actually starting to love cooking more and more since going vegan 16 months ago — and now that it’s getting colder here in the land down under, soups are a delicious way to warm up while you fill up! :)
