Guest guest Posted June 2, 2008 Report Share Posted June 2, 2008 For those that may not know, and even for those that may have an idea, Vegetarian Times Magazine or www.vegetariantimes.com offers great recipes vegan and vegetarian on their website. I found the magazine at Barnes & Noble, while I was shopping for a new cookbook, and immediately fell in love with it. I was wanting to share it with you all, in case there are some who were in the dark. I hope you enjoy it as much as I do. I look forward to reading new recipes that ya'll have tried and enjoyed. Since then, the only time I've looked at the magazine (and then I only saw three pages) was when I was researching Dr. Barnard and found an article with recipes from him in VT through the EBSCOhost academic article feed. If VT has changed their emphasis, I'll have to give them another look. I think they may be the longest-lasting veg magazine in the U.S. that's still in publication. I'm sure once I branch out some more, and actually hit more bookstores, I will find better recipes, but this one is the best that I can find that sends them, right to my email. Well, no magazine is going to be perfect, I guess. I think I'll take a new look at it, then. I don't often eat out of cans, but I like to know good recipes for doing it because they are useful for times when I don't have a full kitchen, like camping or staying in a hotel. And I seem to remember some interesting non-recipe articles in VT back when I used to read it. Real pop-y stuff, like interviews with vegetarian celebrities, or the never-ending surface-y yoga articles, but entertaining and usually with a useful nugget or two. Guest guest Posted June 3, 2008 Report Share Posted June 3, 2008 VT offers several emails to choose from or choose all. -My Vegetarian Times-seems to feature articles/recipes from the magazine -Vegetarian recipe of the week -Vegan recipe of the week -Low-Fat recipe of the week -Dairy-Free recipe of the week Most recipes are easily convertible and, of course, you can substitute your own cooked beans for cans beans. I recently bought a subscription from my niece through a fundraiser. I've been pleasantly surprised that most of the three issues I've seen are about 50/50 veg/vegan. Previously, I'd go to the library to look at the current issue (can't check those out) or grab several older issues to look at at home. The only way someone is going to get an easy, not gourmet meal, but also not something that requires opening a can or a package, that is also loaded in sodium, is to either make meals from scratch, or buy a cookbook that offers the same qualities. Now, I'm only speaking for me, here. Most of the time, instead of buying cans of diced and spiced tomatoes, I will make it from scratch, but now-a-days, life is hectic, time is usually crunched, and unless you have the time to spend on creating a meal such as that, recipes like that, are a great option. Just pay attention to what you buy. Purchase low sodium or salt free products, because for most women, and I am including myself in this, salt makes us retain water. Instead of cubed spices, I usually work with mrs. dash or vegetable broth. Grilling, of course, is far better than broiling or frying, since most of the nutrients from foods can be lost during cooking, or at least that's what I've grown up knowing, I could be wrong, so don't etch that in stone, just yet. lol. I can always find ways to make things healthier, so, if you know how to cook, other than following directions from a box or packet, the recipes can be altered to fit your lifestyle. I can't stand salt, or at least, a lot of it, so I try to figure out which spice works for me, and the meal, to replace it. No, about the same as it has been for the past few years. The mag admits it gears itself towards SAD eaters who want the occasional veggie meal. There's always VegNews: http://www.vegnews.com and the magazine of the Vegetarian Resource group: http://www.vrg.org Both of these are vegan, but of course you'll have to remove the oil from the recipes.
