Have you tried agave nectar? It is sweeter than cane/beet sugar, and

has a lower glycemic level (not sure whether I said that right),

better for diabetics :).

I bought some and really like it but have not used it for cooking.

I use blue agave in my tea and cereal sometimes. I like stevia a lot also. I

use the white more processed stevia for tea, the leaf and the powered from

natural state leave more of an after taste. Which isn't bad, but a little to

strong for tea (in my opinion).

I've done it and I don't think you need as much. In muffins and cookies it's

'lighter' than honey ,which makes the texture of the breads nicer. It's not as

dense. I am addicted to the stuff!

I've used agave nectar in scones and normally recipes call for 1/2 c.

of sugar and I only used 1/3 c. agave. It is sweeter than sugar or

honey, so you don't need as much. I just don't know the ratio for

may have to adjust the amount.

I cannot get agave nectar in the grocery store. I have to get it from the health food store. In the one I go to, it's by the syrups.

I have only been able to find it at my health food store -- Whole Foods/Wild Oats in the syrup section.

I highly doubt that Wal-Mart will ever carry agave nectar. I don't think they even know what it is. And if it doesn't say "BIG MONEY MAKER" to them, it won't happen. Plus the manufacturers of agave nectar tend to be smaller more eco-friendly companies with sustainability in mind, things that I don't think the Big Box markets understand. They only know how to crush these small companies and try to take over the world with their promises of low cost (but at what price?) I know there are a lot of advocates of Wal-Mart out there (sorry if I offend), and on the surface, it appears that shopping there will save you a few pennies here & there, but in the long run, it will cost a lot more than you realize. Instead, check out some of the regular grocery stores with health food sections-many do carry agave nectar. It could be in the health food section or if the

store mixes everything up, look for it by the syrup & honey. In the Salt Lake area, Smith's/Smith's Marketplace and Harmon's are two chains that carry it (granted, not every location has everything, but if you see it at one location but not another, ask for it and they may just get it for you). Another alternative to sugar is Stevia in both a powder or a liquid. It is 200 times sweeter then sugar so, use very , very little otherwise it is very bitter. and a small amount goes a long way. Probably, *if* your grocery store sold it. None of the 3 chain grocery

stores in my city sell it, only the health food store. They charge a lot

for it, too. I know people have been ordering it much cheaper from

on-line, even Amazon.

I've tried a few different brands, and 3 different forms (powder, leaf

and liquid) and hated each one. What made it worse was the price - even

a tiny bottle of less than an ounce costs over $7 at the time! I'd

rather just use sugar (sucanat, usually) for the few times I actually

use a sweetener.

If you use more then 1/4 of tsp it will be very very bitter and not all stevia tastes the same

I have grown stevia for several years, I have tried different ways to use it. I

dont care for it in sweet cooking. I like it in stews beans foods

that need little sweeting. I like it in chocolate mint tea.

I used very, verry little. Even when I use Sweet n Lo I use a few

granules, not even 1/16th of a teaspoon. Back when I was using it

steadily for coffee and tea, one little pink packet swiped from a diner

would last me over a week. I used that little of all the stevias I

tried, too.

I find that the difference between the various " colors " of agave is the

intensity of the flavor.

The light has the least flavor, the darker ones have a more pronounced

flavor and may affect the taste of what you are using them in.
