I use the white more processed stevia for tea, the leaf and the powered from natural state leave more of an after taste. Which isn't bad, but a little to strong for tea (in my opinion). In muffins and cookies it's 'lighter' than honey ,which makes the texture of the breads nicer. It's not as dense. I am addicted to the stuff! And if it doesn't say "BIG MONEY MAKER" to them, it won't happen. Plus the manufacturers of agave nectar tend to be smaller more eco-friendly companies with sustainability in mind, things that I don't think the Big Box markets understand. They only know how to crush these small companies and try to take over the world with their promises of low cost (but at what price?) I know there are a lot of advocates of Wal-Mart out there (sorry if I offend), and on the surface, it appears that shopping there will save you a few pennies here & there, but in the long run, it will cost a lot more than you realize. Instead, check out some of the regular grocery stores with health food sections-many do carry agave nectar. It could be in the health food section or if the store mixes everything up, look for it by the syrup & honey. In the Salt Lake area, Smith's/Smith's Marketplace and Harmon's are two chains that carry it (granted, not every location has everything, but if you see it at one location but not another, ask for it and they may just get it for you). It is sometimes stocked right next to the honey. It is 200 times sweeter then sugar so, use very , very little otherwise it is very bitter. and a small amount goes a long way. Stevia can be found in health food stores or vitamin shops. None of the 3 chain grocery stores in my city sell it, only the health food store. They charge a lot for it, too. I know people have been ordering it much cheaper from on-line, even Amazon. The light has the least flavor, the darker ones have a more pronounced flavor and may affect the taste of what you are using them in.
