Guest guest Posted July 18, 2008 Report Share Posted July 18, 2008 SOURCE: www.veg4life.com Fried Rice with Carrots and Peas Ingredients 2 garlic cloves, minced 1 bunch of scallions, diced ½ tspn ground fresh ginger 2 carrots, peeled and diced 3 cups cooked brown rice 1 cup frozen peas, thawed Soy sauce to taste Preparation Water sauté garlic, scallions, ginger and carrots in a large non-stick wok, until tender. The veggies are chopped and dumped right into the cooker with the rice and water (sometimes broth instead of water) and about a quarter cup of lower salt soy sauce. My son discovered " fried rice " while out with his buddies one time, after 2 decades of refusing to touch rice here at home, and quickly asked me to duplicate the dish. This version is a lot healthier than frying stuff up in some oil, like the restaurant most likely did, and only one pot to clean.
