Fried Rice with Carrots and Peas

 

 

 

Ingredients

 

2 garlic cloves, minced 1 bunch of scallions, diced ½ tspn ground fresh ginger 2 carrots, peeled and diced 3 cups cooked brown rice 1 cup frozen peas, thawed Soy sauce to taste

Preparation

 

 

 

Water sauté garlic, scallions, ginger and carrots in a large non-stick wok, until tender. Add cooked brown rice and peas. Stir and heat. Add soy sauce to taste. Serve immediately.

I make something similar to this right in the rice cooker. The veggies

are chopped and dumped right into the cooker with the rice and water

(sometimes broth instead of water) and about a quarter cup of lower salt

soy sauce.

 

My son discovered " fried rice " while out with his buddies one time,

after 2 decades of refusing to touch rice here at home, and quickly

asked me to duplicate the dish. This version is a lot healthier than

frying stuff up in some oil, like the restaurant most likely did, and

only one pot to clean.
