Looking for waffle recipe please...

I found a fantastic (and healthy) waffle recipe that uses beans and oatmeal. I know, beans!?!? My kids love waffles and I was sure they wouldn't like it but their response was, "Mom, these are the BEST waffles you've ever made"! I guess that says it all. The recipe looks great and I'm definitely going to try it, but I

wanted to put out a word of warning. The recipe uses soaked, uncooked

beans and says " This recipe works great with any type of bean. "

 

I would advise not using kidney beans as they will make you VERY sick

in their raw or undercooked state. I know that other beans are equally

ill-advised but I'm afraid I don't know which kinds. To be safe, stick

with only the beans mentioned in the recipe or any other bean that you

know is safe to eat as sprouts.

This looks really interesting! Beans are a great ingredient in many

recipes. I just made yummy chocolate fudgsicles with pinto beans in

them--very creamy and delicious. Do you think the waffle recipe

would work without the 2 Tbsp oil? could I substitute apple sauce

(or nothing)?

Hmm... you got sick off pinto beans and that's one of the beans the

author of that recipe specifically recommends. Can you have a look at

that recipe and see if you think it's safe to use pinto beans in it?

I'm wondering if the author of the recipe has only made it with

soybeans (which are safe since soy sprouts are safe to eat) and just

assumed it would be okay with pinto beans? Or is the amount of time

the mixture is in the waffle iron long enough to prevent lectin

poisoning?

According to one of the government links I gave, the FDA,

says " Undercooked beans may be more toxic than raw beans. "

The only time I've been sick from beans was when I whirled almost uncooked pintos in the Vitamix. I was in agony for a couple of days. I haven't eaten pintos since then.

This is my favorite waffle recipe. Just make sure you have a *good*

non-stick wafle iron, as it gets really gooey. It's been a while since I

made them, but *think* it made 6 or 8 regular size waffles.

Oatmeal Waffles

Low-Fat Mcdougall Acceptable

 

 

Amount Measure Ingredient -- Preparation Method

2 cups rolled oats -- dry

2 cups water

1 medium banana

1 tablespoon sugar, raw -- or other sweetener

1/4 teaspoon salt

1 teaspoon vanilla extract

 

Place all the ingredients in a blender and blend until smooth.

 

Let stand a few minutes; if batter becomes too thick, add enough

additional water to make batter easily pourable.

 

Pour into a heated, well-oiled waffle iron. Cook for 10 minutes without

lifting the lid.
