I need help with a diet plan

I am so grateful for all of the wonderful info I've been getting from

both Eat-2-Live and FatFree Vegan.

 

I have always been close to vegetarian, but a few weeks ago I decided

to make the switch to vegan. I've had about 90% success rate and have

lost about 5 lbs so far. I still meet mom for sushi night once a week.

I'm going slow, but I'm going ;-)

 

I need help with a diet plan. I don't always have time to prepare in

advance, and I can't always afford the higher prices of natural,

organic and vegan foods. I have a history of sugar imbalance so I do

need to eat something at least every 3 hours to keep my sugar in

check. I'm not sure if what I'm doing now is nutritionally balanced.

 

A typical day for me starts at 2am. On work days I usually eat a

piece of bread, cereal or cheese during my morning briefing at 3:30,

then whatever I pack for my 7am lunch (usually frozen edamame or

leftovers from the night before). I like to try something different

everyday and I've varied from Morningstar Farms and Boca burgers to

marinated tofu or homemade seitan ribs, or hummus. On my break at

10am I usually have a small bag of microwaved natural popcorn, then

when I come home at 12:30 I eat anything in site before I fall asleep.

When I wake up at about 4 I again start foraging for whatever is easy

and it all starts over. When I do cook, I usually try to save some

for lunch and end up giving the rest to my grateful dogs.

 

I know there are many of you out there with suggestions and I would

love to hear some!

Hi Jill

I can't imagine keeping a schedule like yours - it must be tough. The one thing I noticed on your diet is the lack of beans. Beans are so great for you. Besides the fiber and nutrients and protein, they really help keep your blood sugar stable. Perhaps incorporating a lot more bean dishes would be helpful. Tonight we just enjoyed a tortilla pie casserole. Everyone loved it and it is loaded with beans. It is super easy to make and is even better as leftovers. We love to snack on beans - just plain garbonzos with a little salt and pepper. My children love them too. We like beans for breakfast as well. The US is probably the only country where beans aren't a staple for breakfast. We have even made them into waffles and boy are they delicious. Tope with them fruit rather than syrup and they really "stick to your ribs". There are so many ways to prepare beans and they are so easy. We make them into cold salads and spreads for sandwiches - whcih get eaten right on the spot before we can even get it on the bread. I hope some of these suggestions help.

Oh I love beans for breakfast.

I eat beans with rice (lentils, black beans, etc) with the rice or with shredded potato and lots of onions, garlic, and peppers.

 

I don't get hungry all morning if I do this.
