Well, I went off the diet, ate sugar, and got a migraine to beat the band. I'm also thinking that I may have the beginnings of Type 2 Diabetes - adult-onset. I'm doing some reading and it says that "FATS contribute to insulin resistance." Well, I'm in a panic. I'll get myself tested, of course, just to make sure, but my gut tells me I'm either borderline or I've crossed over! BUT, I'm back on the vegan diet/lifestyle but I need to learn more about HOW TO COOK VEGAN WITH LOW/NO FAT. Any good books, websites, etc. that cater to the vegan lifestyle with low/no fat? Help! But, to find out you'll have to have a physician do some tests. They would include a fasting blood glucose test. A urine test is not sufficient, neither is a "finger stick" test.
