There was a vegan waffle recipe somewhere that used ground white beans as the protein/flour and I can't remember what else. I wanted to try it so bad that when I saw an old fashioned waffle maker in the thrift store I bought it. Now I can't find the recipe! If you don't know which one I'm talking about, please let me know if there is another that you like. Also, a server at The Olive Garden, you know who you are ;-), told me she'd post a recipe for vegan French Toast using chickpea flour instead of eggs to bind. I haven't seen it yet. Also, here's a recipe by Bryanna Clark Grogan that I can vouch for. She made waffles similar to this for the McDougall Celebrity Weekend and they were delicious. The name I was looking for was " High-Protein Oat Waffles " but the recipe for " Wheatberry Pancakes " looks just as good to me. Both are Fat Free Vegan, and if anyone else in interested in seeing I would be glad to post the recipes.
