I chopped the leeks very finely and cooked them for about 20 minutes in vege stock, thyme and a splash of balsamic. I steamed the unpeeled potatoes and once they were done, mashed them into the leeks. It was delicious! I often feel fat-free mashed potatoes need a little something extra (some fat, for example!) but these were perfect. Even my leek-hating 12-year-old son Mack raved about them! I just tried millet for the first time recently and wasn't very impressed by its gloopiness - but I can see that would be a good quality in mashed spuds! What sort of quantity do you add?
