Monday breakfast: Ezekiel bread toast with mashed banana and cinnamon lunch: Subway veggie-max sandwich (Garden burger) on Italian bread, V8 juice supper: at work--red pepper and spinach salad, humus, dessert, hot kashi cereal with a fresh apple Tuesday breakfast. Green smoothie with romain, strawberries, banana, flax and NF soy milk lunch: Yves veg brat on Whole wheat pita, mustard and ketchup and an apple supper: Spicy red beans and brown rice, steamed collards Wednesday breakfast: brown rice pudding with raisins, apple , sweet potato and nf soy milk lunch : Leftover red beans and collards supper: Pasta sauce with seitan Italian sausage over zucchini strips and spinach pasta Thursday breakfast -at work- Kashi cereal, NF soymilk, fruit lunch: leftover pasta and sauce, supper: sorta nachos- ff corn tortilla chips( made in dehydrator), refries,a good shake of nutritional yeast,(cheese for the omnivore) all heated up in microwave, topped with green pea guacamole and pico de gallo, slipped onto a bed of salad greens Friday breakfast:at work- Kashi cereal, NF soymilk, fruit lunch: deviled eggless salad with tofu, mustard and celery, with greens and sliced tomato. Rye crisp supper: Harvest moon party for two- grilled Tofu and veg on bamboo skewers out on the balcony, Moon viewing dumplings for dessert Saturday Late brunch- Buckwheat pancakes with fresh blueberries and maple syrup supper at work- probably leftovers or a sandwich and fruit Sunday breakfast -eziekiel bread toast and fruit lunch- Very light, probably salad and fruit supper- picnic with D, mom and Dad at the Shakespere festival- Antipasto salad, with marinated vegetables, beans, and a good wholewheat loaf, or pita Quote Link to comment Share on other sites More sharing options...

Also, I've discovered that when the bread is toasted and there are extra wax peppers (a.k.a. Hungarian peppers) and a squirt of honey-mustard dressing (no mayo, of course), the result is decent -- better than other fast food alternatives. The small sub has only 3 grams of fat. Since Subway is all over the place, it's nice to know it's possible to get one thing quickly that is both reasonably healthy and fairly tasty. Ok, so this isn't overwhelming praise. But when compared to the usual fast food suspects, it towers over the others. , " C.
