Help, Substitute Needed!

Hi All,

 

I wanted to make this recipe in the morning but I have no vegetarian bouillon.

My local store only carries chicken and beef bouillon. Is there any suggestions

on anything I can sub for it!?!?

Green Bean Casserole

In celebration of the Canadian Thanksgiving Holiday

 

Green Bean Casserole

 

1/2 medium onion, diced

3/4 cup chopped button mushrooms

1 Tbsp. vegetable oil

1/2 tsp. oregano

1/2 tsp. thyme

1/2 tsp. sage

Salt and pepper, to taste

1 1/2 cups unsweetened soy milk

1 cube vegetarian bouillon

2 1/2 Tbsp. cornstarch

2 Tbsp. cold water

1 can cut green beans

1 (6-oz.) can French-fried onions

 

Preheat the oven to 350°F.

 

Sauté the onions and mushrooms in the vegetable oil in a skillet.

Add the herbs, salt, and pepper.

 

Heat the soy milk and bouillon in a saucepan, stirring until the

bouillon dissolves. Do not bring to a boil. Mix together the

cornstarch and water and add to the pan, stirring well.

 

Quickly add the green beans, the sautéed veggies, and about half of

the French-fried onions and stir well.

 

Pour the mixture into a casserole dish and top with the remaining

French-fried onions. Bake for about 15 minutes, or until the onions

begin to brown.

 

Makes 4 to 6 servings

Hi –

 

For the bouillon – I just use whatever spices I normally associate with the chicken or beef – like sage and celery salt and pepper for the chicken.

 

But in terms of fat free – please don't use the can of French fried onions. They are so unhealthy. Make your own French fried onions by browning onions yourself. It really tastes as good and is much healthier for you. The homemade onion recipe may not be totally fat free – but my goodness, it is certainly lower fat than the can of French fried onions!

I developed a recipe for healthier green bean casserole if you are interested, it is below.

 

Nancy's Green Bean Casserole

 

I modified the traditional green bean casserole recipe in an attempt to make it much healthier. If your recipe calls for extra spices (soy sauce, worcershire sauce or other herbs) feel free to add them to this basic recipe.

Ingredients:

 

 

10 oz green beans (cooked al dente)

8 oz sliced mushrooms (I used cremini ones)

½ sliced onion

1 ½ cups soy milk (rice, almond are fine)

3 T flour (I used Wondra flour)

Soy sauce to taste

Preparation:

 

 

Sauté onions and mushrooms in water until tender.

Whisk together milk and flour until smooth. Add to onions and mushrooms. Heat over medium heat while stirring constantly until mixture begins to thicken.

Remove sauce from heat and fold in green beans. Put mixture in 2 quart casserole dish. Top with Fried onions (recipe follows).

Bake at 350 degrees until heated thoroughly.

 

Fried Onions

 

I was all set to use that can of French fried onions until I read the label. Be kind to yourself and take a few extra moments and make your own! The canned ones are SO bad and these are so tasty!

Ingredients:

 

 

 

1 large onion sliced thin, soaked in ice cold water for 15 minutes or more

½ cup all purpose flour

2 T vegetable oil

Preparation:

 

 

Remove onion from ice water and dry thoroughly.

Place flour in a large plastic bag. Add onions and shake vigorously.

Heat oil in a cast-iron or non-stick pan. Add onions and cook over high heat until browned, flipping as needed. Remove from pan and drain.
