Beanloaf

I want to start slowly replacing regular meals with vegetarian ones.

So, I need to know if you can make a beanloaf with Northern beans, and

can someone give me a few recipes for it?

For the beanloaf, try Jennifer's Magical Loaf Studio (http://www.veganlunchbox.com/loaf_studio.html) -- you can use any type of bean, not just those listed (just select mixed cooked beans and use your great northern white beans). I've made a few loaves using this "studio" and they've all been good.

The loaf was good. It tasted almost like I thought it would, since I like beans, carrots, rice and sautéed veggies, anyways. I have always sautéed veggies with vegetable oil, and since 2000, I've used extra virgin olive oil. This is the first time that I used other liquids (liquid from the beans), and it was delicious. Also, Jennifer's site was great in how it calculated the amount of ingredients needed for the recipe. This was my first totally vegetarian dish I've made, and I'm proud of myself. So, if you or anyone else would like to share recipes for a begginer vegetarian, please feel free to send it to me.

I'm so glad you liked it! For other recipes you just can't go wrong with Susan's excellent Fat Free Vegan site and her blog -- the recipes are absolutely excellent. My current favorite is the Southwestern Split Pea Soup -- I've been making it for weeks now and have not yet gotten tired of it. Don't get scared off by the reference to a pressure cooker if you don't have one, you can make it on the stove as well.

Some recipes from my now-defunct Reluctant Vegan blog:

 

*Black Bean Soft Tacos*

 

1 can black beans, mashed, or 1 can black-bean refried beans

1/2 cup salsa, homemade or in a jar (I used Pace chunky medium, because

I needed to use it up)

8 corn tortillas

 

Wrap the corn tortillas in foil and put them in the toaster oven on 350

while you do the rest (or do whatever you usually do to warm tortillas).

Heat the beans and salsa together until they start to bubble. Serve with

homemade salsa

you like with soft tacos. Lettuce/tomato/onion? I was thinking it

wouldn't be bad with just some cilantro leaves and radishes, the way my

brother-in-law from Mexico eats tacos.

 

*Easy Homemade Salsa*

 

1 lb or so tomatoes

1/2 onion

1 jalapeno, seeded

juice from 1/2 lemon

1 clove garlic

Handful of cilantro

dash of salt

 

Chop all the stuff together. (I use chopping scissors, but a few pulses

on a food processor should work, or whatever you usually do to chop

stuff small.)

 

 

" Meat " loaf and mashed potatoes

 

I made the meatloaf at http://www.fatfreevegan.com/Meat_subs/loaf.shtml

today, and everyone liked it, even my wife, who really really really

prefers to eat meat at every meal. She said it hits the same spot as

meatloaf. I'm reposting the recipe here with my changes in brackets. I

served it with mashed potatoes and mushroom gravy.

 

" Meat " Loaf

 

Serves 6

 

2 cups of prepared veg broth [i used a delicate ginger-garlic broth I

made the other day]

1/2 cup ketchup

2 tbsp tamari (or soy sauce)

2 cups of TVP granules

1 cup of quick oats or bread crumbs [i didn't realize I was out of

these, so I used 2 wheetabix, which equalled almost a cup, and made up

the rest of the cup with Grapenuts cereal. In my experience, anything

grain- or bread-like works in meatloaf]

1/4 cup ground flaxseed

1 tblsp of nutritional yeast

1 tsp each garlic granules, onion powder, oregano and basil [didn't have

basil, so I left it out]

 

(BBQ topping option: 1/3 cup unsweetened ketchup, 2 tbls tamari, a good

shake of liquid smoke) [i skipped this]

 

Preheat oven to 375 degrees.

 

1. In medium bowl, combine prepared broth, ketchup, tamari and TVP. Mix

to combine and let stand 10 minutes until the liquid is absorbed.

 

2. Add remaining ingredients, except topping. Mix well

 

3. Pack mixture into a 9 x 5 loaf pan or a glass casserole. (Many people

making this suggest just forming into a loaf on a baking sheet.) Bake

40-45 minutes.

 

4. If using topping, spread on loaf during the last 10 minutes of baking.

Oh my goodness, I am so happy! I have been looking everywhere for the

tahini sauce recipe! I had thought that I was going crazy. I knew I

had seen this recipe on the fat free vegan site but when I went to

I am wondering about the meatloaf recipe you posted here. Do you

think I would like it? I don't like setien, and I have not had TVP

I do like seitan, so it's hard for me to say, but my meat-loving ex-wife

says it really hits the meatloaf spot, and she's not a huge fan of " fake

meat " .
