Seasoned black beans kick up the Southwestern flavor; the sour

cream topping tempers the heat.

 

 

Cakes:

1/2 cup bottled salsa

2 teaspoons ground cumin

Stir in 1/2 cup breadcrumbs, 1/4 cup green onions, and salt.

Divide

mixture into 24 equal portions, shaping each into a 1/2-inch-thick patty. Place

1/2 cup breadcrumbs in a shallow dish. Dredge patties in breadcrumbs. Place

patties on a baking sheet coated with cooking spray. Bake at 375° for 14

minutes, turning after 7 minutes.

To

prepare toppings, combine sour cream and 1/4 cup green onions in a small bowl.

Combine avocado, tomato, and juice in a small bowl. Top each patty with 1 teaspoon

green onion cream and 1 teaspoon avocado salsa.

 

Yield: 12 servings (serving size: 2 cakes)

I don’t have a clue where to find reduced fat vegan sour cream—I

don’t even know if they make it but I figured as experienced vegans you could

probably think of something to improvise. J

You make it. Susan has a great version on her site, as part of the

eggplant paprikash recipe, if memory serves. (My browser is acting up,

so I can't check right this second, but search on " eggplant paprikash "

at fatfreevegan.com

You can always make it yourself. I believe McDougall has a great recipe for it. One of my cookbooks also has a great recipe for it that I use when I need vegan sour cream. If I can find it, I'll let you know. That's a big if as I'm in the process of packing up to move and may have already packed that particular cookbook. You can also look on the internet and find recipes. Some are not low fat but you can definitely make them so.
