Redwood (a UK company) makes excellent Thai 'fish' cakes - they're so fish-like that they make vegetarians nervous!! I'm assuming you're in the US - Redwood have just started exporting their soy cheese, Cheezly (for which I'm the NZ importer) to US but not sure if they're sending their fake meats over too.As for cottage cheese - not something I miss! Has anyone else seen these in soy? I've seen recipes for soy ricotta, which should serve in place of cottage cheese in a pinch. I've also seen canned " tuno " , and while it's not soy, and NOT low in fat, we quite liked the fried-gluten " scallops " we used to buy in the Chinese section of our grocery.
