I am only somewhat familiar with Guam culture because while living in Hawaii I worked with a few ladies who grew up there. I didn't know they ate mostly meat. I guess I always assumed there would be a diet rich in island fruits and veggies. I hope we can be of help to you as you make the dietary transition for yourself. I think the big concern all those years was protein. I don't like tofu and tried many, many times to eat it. (I guess my body knew better. lol As I found out recently I have a food sensitivity to soy.) I can go for days, weeks without eating animal flesh; once went two years without dairy. I do like seafood but could " give it " up. So it's been a week since I decided vegan was for me (after doing more reading)and haven't had any animal products at all (not easy for this first week since I was out of town for half of it). Have to say I'm feeling pretty good. Anyway, one of my goals would be to eat without concern for calories. And I guess I'm still stuck on the whole protein thing especially since I'm not eating soy. Perhaps you’ll find this helpful from Dr McDougall’s website: People worry more about protein in their diet than any other nutrient. The obvious truth is: there is enough protein in plants to grow an elephant, horse, or hippopotamus. Certainly there is enough protein to grow relatively small people. Furthermore, all plants contain all of the amino acids in proper balance for ideal human growth. In other words, it is impossible to make up a diet deficient in protein or individual amino acids from any unrefined starches (rice, potatoes) and vegetables. You must get over this common myth in order to comfortably follow a diet that is best for you and the family. The only real problems with protein come from eating too much. If you just eat a healthy balanced vegan diet, you would not even have to concern yourself in the least about getting enough protein. If you eat fruits, beans, nuts seeds and plenty of veg, you will get all the protein you need without concerning yourself with the subject in the least. If you are worrying, despite the assurance of folks here, I would think adding some cooked beans and some brown rice as heftier foods that contain concentrated protein might help you adjust, plus they are good for you!
