HELP!!!! What the heck do I make with stuff?

In my fridge, I have:

 

1 head of green leaf lettuce (I never believed in iceberg anyway)

1 red pepper

1 and 1/2 stalks of celery

2 lemons

1 cucumber

8 oz of white mushrooms

2 small white onions

1 and 1/2 red onion

 

So what can I make with all of this? Keep in mind its snowing today

and I am disabled and can't drive so food shopping is out of the

question today. Now what?

My first thought is a stir-fry and my second is a stew. Do you have

any tofu or beans? Any brown rice, grain, or pasta?

do you have any rice or potatoes? You can sautee the onions, mushrooms,

celery, peppers and serve over rice, potatoes or even pasta

In the closet I found a can of black beans, a can of kidney beans,

two cans of chick peas, a big can of spinach (don't know how that

got there), a can of yams, and a can of corn. Weird collection, but

thats whats in the closet for today. No tofu even in freezer right

now.

 

So, what do you think? Anything edible here? Yeah I'll get to

spice the heck out of this, but that won't surprise me.

Marilyn....I would just eat it...LOL!

 

I am not into fancy recipes, etc....Eat those foods as close to nature as

possible...

 

Sautee the veggies and toss with the beans.....so yummy....or sautee, add

beans, water, seasonings for a stew...

 

You have good stuff there...!!

See and mom is a gourmet cook. Wait til she has to figure out

cooking vegan now! That'll kill her! Guess I've just cut down my

invitations to her house for dinner significantly. And I'm supposed

to go this week too. Damn, and she's such a good cook too. Oh well.

UGH! I can see your difficulty!!

 

My mom was a great cook too! Now *I* am the mom, and I never get a

complaint when the meal does not have animal products ;-)

Ya know, I added a can of beans, a can of corn, and a few cups of

water and some spice this afternoon and this all became soup! Well

soup and salad but how bad can that be?
