Guest guest Posted March 8, 2009 Report Share Posted March 8, 2009 Now in here they say to add eggs, I'm guessing to make it sticky. What other suggestions does anyone have in place of eggs? Eggplant Burgers 1 eggplant garlic salt 2 Tablespoons flour <2 eggs beaten> - replace with what? 1 teaspoon oregano 1 Tablespoon parsley Cut eggplant into cubes and steam over boiling water until tender. Let drain. Put in a mixing bowl, add eggs and seasonings(add wheat germ if desired) let sit 1/2 hr. Sprinkle hands with flour and shape mixture into burgers. Fry in hot oil and serve very hot. If I have to fry anything I have a certain pan lined with Teflon thats like a big wok that I use very sparingly.. What I would do is slice the eggplant rather than cube it, coat it with the seasonings (plus a bit of liquid to make them stick) and then grill or bake them. Perfect for putting in a burger! Ener-G brand being the most common. Right now, I have the brand Orgran, which is made in Australia. The ingredients in these egg replacers that give it the "sticky power" are potato starch and tapioca flour. In a pinch you can use 2 T. cornstarch or arrowroot to equal one egg. Or in the case of making the eggplant burger recipe, if it were me, I'd simply cook a small potato, mash it up well with a fork and use about 1/2-2/3 c. of that mixture to substitute for the two eggs. For future reference, in baked goods like muffins or cakes, you can substitute 1 small mashed banana, 1/4 c. applesauce, 1 T. ground flax seed with 3 T. water, allowed to set for a few minutes to thicken, or 1/4 c. mashed tofu. I warm the water, then add the ground flax seed, and let it sit for about five minutes before adding it to the recipe. Norm 2b. Re: eggplant recipes? All of the recipes up to then and for a couple of years afterward are available at www.fatfreevegan.com. All you have to do to find eggplant recipes is enter eggplant in the search box--there are dozens of them. It's probably as close as you'll come to finding fatfree vegan recipes all in one place. You can also find recipes that haven't been added to the site by searching the archives. The search engine isn't the greatest, and you'll see a lot of non-recipes included in the results, but you may come across some good recipes. There are other great sources--McDougall and PCRM come to mind--but I don't have their addresses in front of me. Maybe someone else will jump in and supply them.
