I have been eating this way since October of last year. I have a problem with extreme gassiness! I hate to be graphic but I pass gas and it slips out and there is no stopping it! I can't even be polite and get to a private place! Do you all have any suggestions? I've been reading about beans causing gas, but it doesn't seem to matter what I eat of my diet, just about anything causes it! Help! I have been doing this for about a month and am pleased to say that I have very little gas now. I hope this helps. You may have seen dishes of fennel seeds (sometimes coated with a sugar coating and sometimes mixed with coconut, often lightly toasted) at Indian restaurants. The pasteurization process removes the necessary enzymes to help digest the proteins and therefore causes mal-absorption and gas. I suggest buying organic unpasteurized dairy if possible and also to incorporate probiotics into your regimen. Also, constipation is another side effect from high pasteurized dairy products and commonly a cause of gas build up. Probiotics should help but it is best to reduce your cheese intake. This is because casein (the milk protein primarily in cheeses and cottage cheese) is much more difficult to digest than the whey protein (found in yogurt and ricotta). I could go on for ever on that topic (ha-ha) but basically if dairy is one of your favorite food groups just make sure you eat/drink unpasturized and organic varieties and maybe even try goat cheese replacements because it is much more digestible and just as yummy. I was embarassingly gassy all the time & when I gave up dairy products it went away. It turns out I'm not technically lactose intolerant, but lactose sensitive & caesin sensitive.
