I joked with my honey who is very new (read semi-resistant) to healthy eating that it was the french version of chili! We were very pleasantly surprised how much we liked this dish - we both shared how horrid elementary school lima beans were! I didn't add the salt that is listed in the recipe. We had to add a dash of tabasco and salt free seasoning then it was perfect. Once he's used to not having chicken, cheese, and buttercream frosting - we'll try salad once in awhile ;-) Oh...I finally had a successful dish using dried beans! Yippee! I'm having a devil of a time with dried beans in crockpot recipes. I soak them overnight and follow the recipe, but the beans aren't cooked through. I wonder if my crock is going...Perish the thought!! Although, they do sell them in Holland now, not like when I got it from my mother as a Christmas present back in 2002. I'm having the same trouble... when I cook kidney beans or pinto they are hard.. when I cook lentils they aren't such a problem. I'm thinking of just making a switch with those particular beans to the pressure cooker for that purpose. If you forget to soak them then boil them for 2 minutes, turn off the heat, cover and let sit for one hour. Hope this helps!
