I am a vegan mom just recently moved to Las Vegas from NYC, with 2 vegan kids from birth, ages 5 and 3...I became vegetarian about 20 years ago, and I've been vegan for the past 12 of those years...I'm always looking for info and inspiration for our food! I was vegetarian for years, but fell off the wagon when diagnosed with Celiac disease in 2000. I've tried every diet in the book to lose weight, but nothing worked until I picked up Eat to Live last month. I've always missed being a vegetarian and wanted to try vegan, so this book was the perfect excuse. I live in Holland where their diet is based on meat, dairy, & gluten. Nightmare!
