Blueberry Peach Coffee Cake

Got a little creative last night with some fresh picked blueberries

and organic peaches.

 

I used Susan's Banana Coffee Cake recipe

and substituted fresh blueberries (1/4-1/2 cup) and organic peach

slices (2 peeled and sliced peaches) in place of the bananas.

 

DELICIOUS!! Thanks for the inspiration Susan!

yes I've done this recipe with bananas, peaches, blueberries and strawberries.  it was good with each one. :) We will be making it for Christmas morning this year.  We just have to figure out which one we are going to make. :)

I noticed that flax meal is in the recipe. Flax meal helps you get essential omega-3 fatty acids which you need on a vegan diet. Dr. Fuhrman (Eat to Live) suggests a tablespoon in your daily smoothie. We also sprinkle it on salads and other dishes. When you get it as a "meal" or grind the seeds, the seed is broken down into a form your body will use, rather than just passing right through if you eat it in its natural seed form.
