Guest guest Posted August 26, 2009 Report Share Posted August 26, 2009 1 can of garbanzo beans2 ears of corn- cut the corn off the cob1 tsp of hot curry powdertbsp parsleysalt to taste Juice of lime optionalHeat pan over medium heat. When pan is hot add in corn and garbanzos. Stir around to mix them up- add curry powder and salt. Add a little bit of water or a squeeze of lime juice if it is getting dry but not cooked through. Cook until heated through- the corn got a little carmelized. Toss in parsley at the end.I served it with cucumber salad. I added a little chopped onion at the beginning of the recipe and used an Indian curry paste. My 3-year-old said the heat was " just right " and it was super-easy to make. Yum, thanks for sharing!
