It's just 1 cup flour, 1 tablespoon dry sweetener (I use raw sugar), 2 tablespoons baking powder. To this I add one cup of soy milk. I'm interested to see what others come up with. I make this one from the "hillbilly housewife" and replace the milk powder with soy milk powder and make sure the shortening is non-hydrogenated & vegan. Its really easy and good. All of my non-vegan relatives love them too. Its shelf stable for a long time and really quick on a busy morning. Likely I will try it without the shortening, and add a little applesauce when mixing. We're on a waffle kick. I bought the waffle iron, and the other half loves to make them. Guest guest Posted August 30, 2009 Report Share Posted August 30, 2009 All those recipies sound delish, my problem with every "non-shortening - non-oil" pancake mix is trying to getthe pancakes off my griddle when they are done.I try to make sure the griddle is hot enough to start (with the sizzling watertest) but that doesn't seem to help.The only thing that helps is spraying with a little vegetable oil but that goesagainst my non-oil diet.Maybe someone has a good trick so I don't have to "cheat"???What am I doing wrong?Bob P. I mix it using water most of the time, though sometimes soy milk. I leave out the sweetener, egg/egg substitute and oil. To prevent sticking, I use a 1 second spritz of cooking oil spray in the pan before adding the batter for the first pancake and another 1 second spray every 3-5 pancakes if sticking develops. No, it's not 100% fat free, but it's less fat by my calculations and logic than adding oil to the batter and still using cooking spray in the pan when it sticks. I'm not sure if they would work for pancakes or not though. We have one and I am able to make scrambles and sautes using only a small amount of soy sauce or broth. Is it easier to use less oil when preparing the waffles than it is making pancakes in a non-stick pan? Plus, you need to use more oil to get into all the cracks and crevices. I bought a waffle iron about a year ago and have only used it a few times because it seems like a lot of trouble; but then again, turning each and every pancake takes time, and you have to watch them constantly. I just use a regular non-stick skillet with a quick spray of oil and I never have trouble with sticking. I also find that the key to fluffy pancakes is letting the batter rest for 5 minutes before cooking. Guest guest Posted August 30, 2009 Report Share Posted August 30, 2009 Hi Bob In adopting an almost fat-free diet ,and not one to use synthetic nonstick cookware, I do use oil to season my castiron griddle, fry pan and dutch ovens. Instead of the spray stuff, I put a little oil on a paper towel and wipe a very very thin coat on the hot pan, let it heat, then pour on the batter. This works fine. Waffles as a nuisance? Now you just come over for some of my whole wheat/cornmeal waffles with fresh peaches and blackberries , topped with vanilla tofu-creme, and tell me if my iron is worth the counter-space! LOL The only nuiscance is trying to fit square waffles on a plate, so we opted for a round one. For oil on the waffle iron, wipe a pastry brush with an oiled paper towel, and brush the crevices. Poor the batter till it fills the middle half of the grid, leaving at least 1.5 inches around for expansion. Close the lid, and watch the steam. When the steam stops coming out the sides, count to 30 and pop the iron with the twist of an inserted fork, then lift and serve. It should be crispy on the outside , tender on the inside!
