Cake recipes (was Guidelines for Posting Recipes)

Hi Judy,I apologize if you're already tried these and didn't like them, but my two favorite fat-free cakes are this Chocolate-Orange Cake (http://blog.fatfreevegan.com/2007/12/chocolate-orange-cake.html) and the yellow cake used in this Strawberry Snack Cake (http://blog.fatfreevegan.com/2009/03/strawberry-snack-cake.html). Truth be told, the yellow cake is better with the optional oil, but I like the chocolate cake without any oil at all and I've heard from other people who also liked it.

I'm really curious about the fat-free cookies you've tried and liked.  To me, they are the hardest things to make fat-free.  Do you have any recipes you can share?Susan-------------------------

P.S. Since Mark has managed to get me out of lurkdom with his remarks about copyrights, I have a question for you all. I have found and made a couple great fat-free cookies during the past six months, but have yet to find a really GOOD, TASTY recipe for a fat free cake with fat free icing. If I could just find one, just one, vegan cake recipe that was really good for making now and then when we have company over or to take somewhere as a dessert, I'd be a very happy gal. Anyone have a yummy cake recipe you are willing to share? Even in a private email to me if you don't want to post the recipe after this thread about copyrights? LOL! Thanks so much!

Thanks, Susan. The chocolate cake looks great! Can't wait to try it. I wanted to

get back to you promptly too to say I'm searching for the source of the cookie

recipes I've been using. The past couple months I've been placing that source

info at the bottom of my recipe printouts but when I first switched over to

eating vegan six months ago I didn't do that. And I've visited LOTS of web sites

and read a LOT of vegan/vegetarian related books these months...many from local

public libraries. :-) When I find the sources, get permission to republish/post,

etc., I'll definitely share the recipes or the links.

Just piping up here to say that the Chocolate Orange Cake is THE BEST!

Sometimes, I substitute coffee flavouring; sometimes chipotle. But, it is always

a success!

I do make a fatfree vegan chocolate chip cookie that is wonderful. It's from

Sandra Woodruff's " Secrets of Fatfree Baking " . (I'm not posting the recipe

because I have no way of contacting the author for permission. They are called

" Colossal Chocolate Chippers " . I do add a tablespoon of water, though since the

dough is very dry. They are lovely when finished.

Thanks, Shen, for chiming in about the cake and also for sharing the name of the

cookbook that includes the chocolate chip cookie recipe you bake. I've only

purchased one cookbook since going vegan six months ago but have thought about

buying a couple more. I'll be certain to check out this one on fatfree baking.

Anyone else have any favorite cookbooks on fatfree vegan cooking and/or baking?

Preferably cookbooks that include a few pictures?

 

From the baking I've done so far, the cake recipes have turned out poorly and

really blah. The other problem I've had with cake baking is that they rise

really well and after sticking the tester in a couple places I think they are

completely done. Then later when I serve the cake the middle section is still

doughy. Happened once with company over. Laughed about it...the ends were tasty!

 

Seems I'm learning recipes for vegan cakes either need to bake much longer than

the recipes state, or that I need to just use cake batter and make cupcakes. I

could also try baking on a sheet cake pan too, though. This just might be

another remedy. I haven't tried this.

Thanks, Shen!  I'm glad to hear that you liked the cake.  I'm thinking of making it for a picnic tomorrow, actually, so it's good to know that other people like it as much as I do.  I will have to start doing some experimenting with the different flavors.

I've got that " Secrets of Fatfree Baking " around here somewhere. I'll have to track it down and check out her cookie recipes.  I've had pretty good luck substituting tofu or okara for margarine in cookies, but they're never quite crispy.  I'm also wondering how a chocolate chip cookie can ever be fat-free; I'll have to check out her recipe.

Hi Judy,Differences in elevation, moisture content of flour, and oven temperatures can make so much difference in how a cake recipe works that it's a wonder that anyone ever gets a cake to come out right the first time.  Even a thing like how evenly your oven heats can make a big difference.  So I would say that you're normal in having to adjust the timing of recipes in order to make sure that cakes are done.  You also might want to think about using more or less liquid than is called for.  Once you get a " formula " that works for your ingredients and kitchen, you'll know how to modify future recipes.

As for fat-free vegan cookbooks, the main authors to look for are Bryanna Clark Grogan and Dr. John McDougall.  Two of Bryanna's are fat-free (they have " Almost Fat-Free " in the titles) and others don't use a lot of oil, so the recipes can often be adapted.  The McDougall cookbooks are all fat-free and vegan, and you can usually pick them up cheap at Amazon, in the used section.  Both of these authors have a huge number of recipes available on the web, so check out their websites.  Bryanna's is http://www.bryannaclarkgrogan.com/page/page/579094.htm and her blog is http://veganfeastkitchen.blogspot.com/ .  Dr. McDougall is at http://drmcdougall.com/ (see the archives of his newsletter for lots of recipes.)

Unfortunately, none of these cookbooks have photos.  Until recently, publishers just weren't adding photos to vegan cookbooks, but that seems to be changing now.  Hopefully there will one day be a cookbook that is both fat-free and vegan that will contain photos.

Gosh! I really wish YOU would write a cookbook!

Anyway, re: the Colossal Chocolate Chippers, you are right, they are not 100%

fat free since I added the walnuts and used dark chocolate chips that were

" grain sweetened " ; but, they are VERY low fat!

I have made them with carob, as well.

But, no added fat..............

PLEASE write a cookbook!
