Thanks, Shen! I'm glad to hear that you liked the cake. I'm thinking ofmaking it for a picnic tomorrow, actually, so it's good to know that otherpeople like it as much as I do. I will have to start doing someexperimenting with the different flavors.I've got that "Secrets of Fatfree Baking" around here somewhere. I'll haveto track it down and check out her cookie recipes. I've had pretty goodluck substituting tofu or okara for margarine in cookies, but they're neverquite crispy.
