Green Tomato " Mincemeat "

 

Recipe By :Taste of Home Country Cooking, 1996

Serving Size : 1 Preparation Time :0:00

Categories :

 

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

6 Lbs Green Tomatoes

2 Lbs Tart Apples

4 Cups Dark Raisins

2 Cups Honey Or

4 Cups Brown Sugar

2 Cups Apple Juice Or Cider

1 Lemon -- Grated Rind & Juice

2 Tsp Grated Orange Peel

1/2 Cup Cider Vinegar

1 Tsp Ground Nutmeg

1 Tsp Ground Allspice

5 Tsp cinnamon

 

Core and quarter tomatoes and applies (do not peel). Chop coarsely.

Combine all ingredients in a large non-aluminum kettle and simmer for 2

hours, stirring frequently, until thick. This freezes well or may be

processed in jars. To process, pack hot mincemeat into hot, sterilized

jars, leaving a 1 inch headspce. Adjust lids and process in boiling water

for 15 to 25 minutes.

 

Yield: 7-1/2 pints

i never thought it was hard to make them anyway. just get a betty croker

cookbook or something like it. nothing more than water, flour, baking powder and

water.

I just modify the Betty Crocker recipe: use whole wheat flour in

place of the white flour, use vegan margarine in place of the

shortening, use aluminum free baking powder, and soy or rice milk in

place of the cows milk. We dont eat them very often but they are

quick and easy to make.

 

Here's Betty's recipe:

 

2c flour

3tsp baking powder

1tsp salt

6TBS shortening

2/3c milk

 

Heat oven to 450*F Mix dry ingredients in bowl. Cut in shortening

until it resembles " meal " . Stir in the milk. (Add enough to make it

soft, puffy, and pliable,easy to roll out, so you may need to add

more milk) Round up on lightly floured board. Knead lightly about 6

times. Roll out to about 1/2inch thick. Cut close together with

floured biscuit cutter. Combine pieces and repeat until all dough is

used. Place close together for soft sided biscuits, 1inch apart for

crusty sided biscuits and place on ungrease baking sheet. Bake on

middle rack for 10-12 min.
