The book, Eat to Live, by Dr. Joel Fuhrman has some gluten-free vegan recipes too. Big veggie/bean soups and casseroles should get you through the fall. Once you have even 5 recipes you can rotate through you'll feel more confident. Nutritional yeast is available at healthfood stores. It has a mild cheese-like flavor, so it's good sprinkled on salads, soups, etc. It is a good source of B vitamins. I also LOVE to cook in big batches and know I am ready for the week. I am finding resources everywhere. I made the new Betty Crocker GF brownie mix yesterday substituting for the eggs with applesauce and EnerG and using Smart Balance Oil blend for butter and they were really good. No grit aftertaste!! They also have a choc chip cookie , choc cake, yellow cake mix too (all appear to be vegan) which I will try for the holidays.Their website has lots of variations to use the mixes. My husband is a sweet freak.
