Corn and Potato Chowder (Makes 3 servings) 1 cup chopped onions 6 garlic cloves, minced 3 cups water 1 can corn, drained ½ teaspoon parsley flakes 1 teaspoon thyme 1 teaspoon dried dill ¼ teaspoon black pepper 3 potatoes (equiv of 3 baking size), in medium size chunks 2 cups soy milk In a large pot, combine all ingredients except potatoes and milk. Bring to a boil. Add potatoes and simmer, uncovered, until potatoes are tender, approximately 30 minutes. Stir in soymilk and simmer chowder for 15 minutes or until very hot.
