Corn and Potato Chowder

I’ve got another of my recipes

for you.

 

Corn and Potato Chowder

(Makes 3 servings)

1 cup chopped onions

6 garlic cloves, minced

3 cups water

1 can corn, drained

½ teaspoon parsley flakes

1 teaspoon thyme

1 teaspoon dried dill

¼ teaspoon black pepper

3 potatoes (equiv of 3 baking size), in medium size chunks

2 cups soy milk

In a large pot, combine all ingredients except potatoes and milk. Bring

to a boil. Add potatoes and simmer, uncovered, until potatoes are tender,

approximately 30 minutes.  Stir in soymilk and simmer chowder for 15 minutes or

until very hot.

ooooh! We like garlic in the same vast quantities! It's suposed to be very good for you too!
