How do I gain weight?

Since starting on Dr. Esselstyn's fat-free vegan diet, about 4 months ago, I've

lost about 15 pounds when I wasn't really over weight to begin with.

I just told myself that this is good - I'm the same weight I was in high school.

Now, after getting back from a three week cruise where I stuffed myself at each

meal, I find that I've lost another 2 pounds. I could hire myself out for one of

those concentration camp films quite easily (I'm exaggerating a little).

How do I gain weight and eat healthy at the same time?

I eat rice and bread and potatoes at lunch and dinner. I have a handful of

walnuts each day with a half cup of blue-berries and oatmeal for breakfast along

with a few prunes.

I guess I could increase the carbohydrates but there is only so much room in the

stomach.

Any suggestions?

I had two thoughts, one: are you getting enough calories? Bread, rice etc are not exactly high calorie but ( depending on fiber count) they can be very filling. I am sure you know about how many calories you should be getting, so actually tally up and see if you are getting enough. You may need to eat more calorie dense foods to get enough energy without feeling overstuffed. My second thought was to consider trying to build muscle mass through weight training. Perhaps snacking thoughout the day might help.

 

Maybe try adding avocados, nut butters, soy or other non-dairy milkshakes with some soy ice cream?

 

I also wonder if you're getting enough protein. The above suggestions would also help wih that.

Hmm. I'll try some of those suggestions.

 

The avacado is a good idea but as far as nuts goes, he (Dr. Esselstyn) only

allows a small handful of walnuts each day.

I'll try and find a soy ice cream that doesn't use some kind of vegetable oil in

the list of ingredients.

 

I eat a lot of beans so, I think, I'm getting enough protein.

 

Maybe I'll keep a diary of my calorie intake (as was suggested also); I may be

filling up on very low calorie foods (salads and vegetables) thinking that I'm

getting enough calories when I'm really not.

 

I try and work out 2 to 3 times a week, and have for years, but don't really

notice any weight gain from the workouts. Does keep me strong and flexible

though; I recently got knocked to the street by a bicyclist in Amsterdam with no

negative repercussions.

Bob,

You could try having fruit and greens smoothies. They're easy to drink and will

add a few calories. If you continue to lose weight, maybe you should think about

getting a complete physical. Good luck,

Why are you on a fat free diet to begin with? Using judicious amounts of good fats such as avocados, nut butters, whole nuts especially walnuts, non trans fat cooking oils can enhance your food and make you want to eat more. As active as you are, you could be eating a minimum of 2200 cal a day. Boost your good proteins and whole grains, add more snacks. I too have been following the Esselstyn diet for a year or two. I too am at my

high school wrestling weight, or somewhat below. Because I grow them in the

yard, I have unlimited leafy greens, collards, kale, mustards, arugula, etc. If

I'm heavier than I want to be, I eat more greens and less whole grains and

legumes in the rice bowl. If I'm getting too light, I go for more grains and

legumes and bigger portions. With the right balance you can eat all you want and

never be concerned with weight or calories. That's what the diet promises and it

delivers. I hope all the promises are as well fulfilled. So far, so good.

For health reasons. Heart problems are in my family genetics. I believe keeping

your cholesterol under 150 will prevent problems.

Dr. Esselstyn's diet works. My cholesterol is 126 and my LDL is 60.

When I look at myself in the mirror, I really do look underweight. I'd like to

Can't eat a judicius amount of good fats and stay on his diet.

 

I will increase the avacados and walnuts but the problem seems to be

mathimatical: Most healty foods are about 100 calories per serving

apples 100, bread 70-80, blue berries 70, glass of soy milk 100, bananas 60,

sweet pot. 100, rice 100, etc. (with avacados and walnuts about twice that). Of

course most of the green veggies are even less than that. Now if I want to gain

some weight I probably (as you say - and I agree) should be shooting for about

2200 cal. per day. That comes out to over 20 servings per day, or about 7 to 8

courses per meal. That's a challenge for sure as most of the foods I eat (whole

grains, brown rice, salads, fruit, are very filling.

I'll try the beer but I already have 1 or 1.5 glasses of wine each day.

I appreciate the suggestions and I'm going to try and incorporate as many as I

can and still stay on the diet.

Why don't you contact Dr Esselstyn? It sounds as though yours is an unusual case and it would be a good learning opportunity for him! You can watch one or two of his lectures on YouTube.com and, if you like what

you see, buy his book on Amazon. It's softcover and very inexpensive. Then you

have all the theory and all the recipies.

Good idea, He actually called me after I wrote him a letter one time.

Most of the time his wife or son e-mails me back but it's worth a try.

I e-mailed him (Dr. Essy) and he just called me back.

He suggested grains especially rice with peas. He makes a batch of it and warms

some up in the microwave to eat with meals or between meals.

I'm going to give it a try.

Rice does seem to be up there in the calorie count with about 200+ for a cup

(plus whatever else I can throw in like peas, corn)
