I posted that recipe what seems like a long time ago, so I'm happy to hear that it holds up. I'm making our dinner right now. This year, it's just the three of us, so I don't have to worry about making things that other people will like. So we're having baked tofu (my daughter's request--I was going to make an elaborate seitan); dressing made with whole wheat bread, apples and pecans; mashed potatoes; a gravy much like the one in the stuffed tofu recipe; cranberry relish (a family tradition); broccoli; peas; and possibly crescent rolls, if I have the energy to make them. Dessert is made: Double-Layer Pumpkin Cheesecake, the only really fat-full part of the meal. It was just my husband and I today so I made your Mushroom, Lentil and Wild Rice Timbales, your Impromptu Mushroom Gravy, just mashed potatoes without added milk or butter, a green salad with a nonfat raspberry viniagrette, and your no tofu pumpkin pie (which I make every year!). Everything was fabulous! I had 2 of the timbales and my husband had 4. They were incredible, Susan. I don't know what we'd do without you. I've promised to make them an " Impossible " pumpkin pie soon with one of the little pumpkins we still have sitting on our table. (I can't believe it's almost December!
