Roasting Garlic without oil

Tom, I just wrap the heads of garlic in foil and put them in the oven. I've never used oil for that.Susan (waiting for someone to post warnings about aluminum foil...)  ;-)-------------------------

Hi all.

Curious how you are roasting garlic these days without oil.

I know some are using olive oil spray. But if you go more than a 7/10 of a second (serving size for zero calories) the calories and oil do add up!! After seeing Dr Esselstyn speak in Boston this fall, I am all about not using any processed oils including olive and canola. So how are you roasting bulbs of garlic without oil?

Not from me - I use it all the time, as did my parents and her parents

before her.

 

But if people *do* want to avoid foil touching their food they can

always wrap it in parchment paper first and then foil.

 

As for me, I have one of those clay garlic roasters that I use when

roasting in the regular oven. Since the surface of the bottom portion

where the garlic goes is glazed, no greasing is necessary. But many

times I just take a few bulbs on a piece of parchment and toss them in

the microwave for a minute (Come on, let's now see anti-microwave posts.

LOL) and they're as tasty as if slower roasted when used in soups and

stews or just as a spread on bread.
