I'm inexplicably a little nervous about it. (Inexplicable because I was a vegetarian for 20 years -- vegan for 2 of those years, and it should be like falling off a log for me, but I've become kind of habituated to meat foods since moving in with omnivores.) Part of my nervousness is because of the whole diet-mentality thing, too. I think changing my diet on January 1st just feels too much like all those icky, self-loathing weight-loss attempts of my teen years. I hope y'all will be my cheerleaders, reminding me that people don't have to be trying to lose weight in order to get healthier. Wow, this is really kind of a bigger deal to me than I thought it would be. Thanks to everyone who's going to do it with me. I have a feeling I'm going to need you. I chow down at every meal and went from 175 in June '08 to 139 this morning Dec '09. For a 55 year old mom with no ovaries, I have been AMAZED I could shift to GF vegan and finally feel wonderfully satisfied. Greens and beans!!! Hugs of support, Teresa M. And to keep this on topic, here's a ffv recipe I make for my family a lot. You can use whole-grain flour to make it healthier, but it's fat-free and vegan. Mushroom gravy 1 cup water 2 tablespoons flour 1 small onion, quartered and sliced thinly 2 cloves garlic, minced 1/2 to 1 pound mushrooms, sliced (I usually just use as many as I have on hand) pinch of rosemary or your desired herb, plus generous amount of freshly ground black pepper 1 tablespoon soy sauce 1 teaspoon vegan worcestershire sauce, optional 1 teaspoon balsamic vinegar, optional Stir the flour into the water and set aside. Heat a skillet (I use cast iron) on medium heat, then cook the onions for 8 or so minutes, until they're brown, stirring occasionally. Don't worry if they stick to the pan. Add the garlic and stir another minute or so. Add the mushrooms and cook, stirring occasionally, until the mushrooms give up most of their liquid (about 10-20 minutes). Toss in the herb/pepper, soy sauce, worcestershire, and vinegar and stir until the browned bits come up from the bottom of the pan. Turn the heat down to medium-low. Lazy Bean Soup 1 can (14 oz. or so) beans (any kind -- refried, black, whatever, just make them fat-free) 1 large can (48 oz? 64 oz? something like that) V-8 or other vegetable juice 1 cup of your favorite salsa 1 cup corn, optional (fresh, frozen, or canned) Heat through. I do feel good about shortening my " bounce back " time. Kind of like boxing and getting quicker about getting back up on my feet. When I am " down " sometimes I forget how good the " up " feels.
