I've imbedded resource links, recipe links, and such, in the post. I'll NEVER buy the canned stuff again (of either). The difference in taste (and nutritional profile) is significant. Can't wait to try this with other vegetable combinations as well as making no-yeast beverages. And it's so amazingly easy to do (lacto-fermentation) and the actual cost is considerably less than that of store bought. Enjoy! I have an Amish recipe that's almost sauerkraut, and it is absolutely wonderful. Of course, my husband's a little dismayed that I no longer serve it with ham and butter lambs on Easter, but that's another story.
