You should go ahead and use fresh if you want. Some recipes work better for me with the granules, and I am not a person who is avoiding dried foods (which is what garlic granules are). (I'm not trying to move toward more whole foods; my family already eats almost no processed foods, and I think we're doing fine.) I use tons of fresh garlic in my recipes. Yet I keep the garlic granules around for certain recipes. As far as I know, garlic granules ARE whole garlic bulbs that have been dried and ground. You may be a purist if you'd like. Me, I'm going to keep some dried herbs and spices on hand.
