Plain firm tofu is a little bit like the texture of a boiled egg white.

There are extra hard types which are a bit more like the texture of cheese.

There are also softer types which are a bit more like cream cheese (silken

tofu). They don't have much taste of their own but will take on the flavour

of whatever you add.

One simple thing I like is to take slices of firm tofu, marinate them in soy

sauce, ginger and garlic, then lightly fry them in a little olive oil till

they are a little browned (a couple of minutes each side).

You can also make good tofu scrambled " eggs " by mashing up tofu and adding

things like fried onions, herbs, spices, whatever you fancy, maybe a few

mushrooms or some spinach, heat it all through in a pan then eat it on

toast.

We run frozen bananas through our champion juicer... It comes out like soft

serve ice cream.? You can also mix frozen fruits with it to create " ice cream "

in various flavours, or some cashew butter and carob to create a fudgey ice

cream.? If you don't have a champion juicer, just slicing the frozen bananas is

pretty popular with my 2 yr old and 4 yr old.? Frozen grapes are good too (but

can be a choking hazard for young children).? I have a great recipe for tofu

cheesecake but it has a granola crust... I don't know what you would do to

replace that.

My kids have been loving a variation of these pumpkin muffins:

Yesterday, I ran out of pumpkin, so I substituted what I had. Instead of

pumpkin, we used cooked, pureed butternut squash. Instead of oil, I used

zucchini puree. Applesauce would also work but apples are out for us. Instead

of the eggs, I used flax/water mixture. Instead of maple syrup, I substituted

about 2/3 that amount of honey and some extra water. I'm sure you could play

around with the sugar or use a sugar substitute of your liking. I'd also

increase the spices if you want it to be a bit spicier. And just use whatever

gluten-free flour substitute you normally use. I even made them without any

guar or xanthan gum and they held together fine. Spraying the muffin liner with

oil does seem to be crucial though.

 

My kids loved them. I made 30 muffins and 11 mini muffins from that recipe and

there are only about 6 muffins left. My husband (who can eat anything) tried

them and likened them to a pumpkin bran muffin and said he really liked them.

 

I know it looks like I made a lot of substitutions, but I've found that muffin

recipes are very forgiving. And my kids will eat anything that comes in muffin

form, especially if they're mini muffins!

I've been searching and I'm hoping someone here may have some other

ideas for me. I'm looking for a toddler-friendly dessert for my son's

valentines party next week. I'd like it to be something he can eat- so

vegan, gluten free, corn free, and low sugar. I'll probably have some

fruits available, but other ideas would be greatly appreciated as well!

Someone once suggested as a replacement for birthday cake a

watermelon, cut in half, with candles inserted into the flesh. Then

just slice and serve.

 

For valentines, it is already red, maybe decorate with some sort of

white flower or garnish, and everyone will think you are very

creative.

My vote is for cupcakes. There are two great gf recipes in " Vegan Cupcakes Take

Over the World. "

I've subbed rice flours and used less sugar and they were still great!

You can make them ahead of time, then have the kids decorate their own w/

fruits, sprinkles, coconut, etc.

You can put a dash of apple cider vinegar or some other fairly mild vinegar

in there instead. I'm not certain if it's essential at all, honestly, but if

it does anything, the other types of vinegar will be fine.

umeboshi vinegar is not actually a vinegar, it is a brine with a

cherry aroma and a sour flavor. you can replace it with vinegar and

salt.

Hi everyone!

 

 

 

I am looking for a recipe for faux chicken. I have two cook books that are

 

awesome: The Garden of Vegan, and How It All Vegan. They have recipes that

 

utilize home-made wheat gluten to make faux fried chicken.

 

I am a really good cook, but this stuff is rubbery and tough! It doesn't

 

remind me of chicken in the slightest.

 

 

 

The flavoring is great though, it utilizes a ton of thyme, a bit of

 

tamari, and just a great blend of herbs, but the texture is horrific!

 

 

 

Does anyone have a recipe for fried chicken they would like to share?

My soup from the other night was wonderful. You could use any winter squash:

 

 

*Butternut-Chickpea Bisque*

 

1 onion, chopped

3 cloves garlic, chopped

1 small butternut squash, peeled and cut into chunks or cubes

1 tablespoon dried parsley, or 1/4 cup finely chopped fresh parsley

1 to 2 cups (or one can) cooked garbanzo beans, drained

salt and pepper to taste

 

In a heavy soup pot on medium heat, sautee onion in oil until

translucent; add garlic and sautee a couple minutes more. Add remaining

ingredients and enough water to cover by 1 inch or so. Bring to a boil.

Reduce heat and simmer 30-45 minutes. Puree with hand blender, or in

batches in standard blender or food processor. Serve.
