There are extra hard types which are a bit more like the texture of cheese. There are also softer types which are a bit more like cream cheese (silken tofu). They don't have much taste of their own but will take on the flavour of whatever you add. One simple thing I like is to take slices of firm tofu, marinate them in soy sauce, ginger and garlic, then lightly fry them in a little olive oil till they are a little browned (a couple of minutes each side). You can also make good tofu scrambled " eggs " by mashing up tofu and adding things like fried onions, herbs, spices, whatever you fancy, maybe a few mushrooms or some spinach, heat it all through in a pan then eat it on toast. You can also mix frozen fruits with it to create " ice cream " in various flavours, or some cashew butter and carob to create a fudgey ice cream.? If you don't have a champion juicer, just slicing the frozen bananas is pretty popular with my 2 yr old and 4 yr old.? Frozen grapes are good too (but can be a choking hazard for young children).? I have a great recipe for tofu cheesecake but it has a granola crust... I don't know what you would do to replace that. Guest guest Posted February 3, 2009 Report Share Posted February 3, 2009 My kids have been loving a variation of these pumpkin muffins: http://glutenfreebay.blogspot.com/2006/11/pumpkin-muffins.html Yesterday, I ran out of pumpkin, so I substituted what I had. Instead of pumpkin, we used cooked, pureed butternut squash. Instead of oil, I used zucchini puree. Applesauce would also work but apples are out for us. Instead of the eggs, I used flax/water mixture. Instead of maple syrup, I substituted about 2/3 that amount of honey and some extra water. I'm sure you could play around with the sugar or use a sugar substitute of your liking. I'd also increase the spices if you want it to be a bit spicier. And just use whatever gluten-free flour substitute you normally use. I even made them without any guar or xanthan gum and they held together fine. Spraying the muffin liner with oil does seem to be crucial though. My kids loved them. I made 30 muffins and 11 mini muffins from that recipe and there are only about 6 muffins left. My husband (who can eat anything) tried them and likened them to a pumpkin bran muffin and said he really liked them. I know it looks like I made a lot of substitutions, but I've found that muffin recipes are very forgiving. Then just slice and serve. For valentines, it is already red, maybe decorate with some sort of white flower or garnish, and everyone will think you are very creative. " I've subbed rice flours and used less sugar and they were still great! I'm not certain if it's essential at all, honestly, but if it does anything, the other types of vinegar will be fine.
