I am vegetarian looking to make the switch completely to vegan. I am looking for a soy free alternative to the highly versatile chicken/tofu. If anyone has an idea it would be greatly appreciated!! There are lots of recipies on the web. One thing I recommend is not to try too hard to replace chicken and tofu. They're not essential, and you don't need to be tied to a meat-and-potatoes landscape for your dinner plate. Whole grains and beans and veggies and fruits are perfectly fine foods on their own, and don't really need a high-protein food to go with them, either for health or aesthetic reasons. For the days when you do want something " meaty " , you might consider seitan (there are TONS of seitan recipes on fatfreevegan.com), but mostly, I'd recommend shifting your focus to just filling the plate with wholesome whole foods and skipping the high-protein element altogether. My wondering is that she is concerned about consuming enough protein, something very common esp for those newer to plant based nutrition. Reminder is that we only need 5% of our calories from protein. This confirmed by T Colin Campbell in his work with the China Study. Drs. Matt Lederman and Alona Pulde, in their new book KEEP IT SIMPLE, KEEP IT WHOLE (who are associated with McDougall and TCC) also say in their book (pg 60, " Since 1974 the world health org. has recommended that we get 5% of our calories from protein (6% during pregnancy) " So we dont need to be specifically seeking protein alternatives. When was the last time you met someone protein deficient? The biggest animals on the planet, hippos, elephants , rhinos etc, derive all the protein they need from plants!!! If you go to www.calorieking.com you can type in a food and see that most plant based foods come in well above 5% protein... check out oats and spinach for example and you will be amazed!!! SO just keep it green. Keep it low fat, whole food, plant based and nutritionally dense. You will be fine.
