When we were visiting Washington DC I bought some lemon grass, coconut milk, baby bok choi, rice noodles at a great market after visiting a Thai restaurant and having a veggie curry. So now the questions. From the recipes I've been reading, it seems that lemongrass is not used when curry is used- or is it? What are some typical flavoring combos? I haven't come on a recipe using the baby bok choy in a curry recipe-- do you think this might work, with onions, a mild hot pepper & the coconut milk? Anything other additions? How about mushrooms, would they be good candidates in the curry? (probably not the lemongrass-- I guess I'll use that in something else). I open to input- Let the creativity begin! The curry at a restaurant here has potato in it. My gf eats it I haven't tried it due to the coconut milk- well that and the chicken My experience with lemongrass has only been in soups.
