I want to thank everyone on this list who has responded to me.

I have had so many great suggestions and such an outpouring of kindness...

What a great group this is. I am so glad I joined.

Thank you all so much. Thank you, also, to all who post such great recipes. I

have quite a collection already.

Thank you!

Hugs, Kay

I agree wholeheartedly!! I remember how absolutely miserable I was for the first

five years after I became a vegetarian, I didn't meet another during that time.

It is definitely nice to have other people who feel the same way about at least

some things. Maybe the vegetarians/vegans people get mad at for real, the ones

bombing things and going apesh** are just lonely? I am quite sure that if I

hadn't met more veg people by now I'd have at the very least pulled all my hair

out, and I'd probably scream at people a lot more than I already do. It is

maddening to be alone with that sort of opposition... especially stuff like the

dinosaur argument. That should be the new slogan for the WAPers. Or just meat

eaters in general. " Dinosaurs went extinct even though some were herbivores!! "

The things people come up with... sigh.

Hear hear!

This list is like a little oasis of clarity -- and so civil -- I am very

grateful for what I have learned from all the wonderful contributors to

this list.

I agree as well. I'm sure I would sink into deep depression at the horrible

state of the world

were it not for the knowledge that I am not the only one who knows about it.

In my world, nobody talks about anything because they don't want to offend

anyone.

Thank you all for talking about it. And for listening.

Me, too! Just today, someone told me global warming was a big publicity stunt on

the part of scientists who wanted their names known. Sighhhhh. :)

I really like some of the packaged fake meat products. There are a couple

that I eat regularly, like 1-2x a week -- Morningstar Farms bacon strips and

Quorn breaded cutlets. Others are just special treats. I can go through a

lot of TVP, though -- I love Mexican food and TVP works great in tacos, taco

soup, chili, enchiladas, etc. You'll use your TVP eventually! :)

I do like the packaged products...particularly the sausage patties and

links, quite a few of the burgers/patties.... the " chicken " strips and so

forth, but i can;t afford really to eat them all the time....so i thought i

was really doing something when i got the TVp and the vital wheat gluten(it

is SOOOO expensive in those other smaller packages!)...I really thought i

would be able to make my own " sausage' patties etc etc.....well, i'll get

there~!

Wouldn't the wheat gluten go rancid? Would you need to freeze large quantities?

I'm lucky and can buy it bulk so I usually only buy a pound or less at a time.

Thanks for the info on raw tofu. I did look on the net before I got your

messages today and was relieved to find that it has gone through a cooking

process.

By the way, my husband just went vegan yesterday. Now we are hoping he will

eventually get off his high blood pressure meds and colleestral meds. Reading

The China Study was pretty convincing for him. We are looking for a long,

productive, and healthy life. :)

Wonderful!!!Yes, that is a great book. So well written that it's easy to read, but very thorough and fact-filled.

That’s the book that did it for me. I wasn’t even vegetarian and I went vegan overnight after reading that book.

Hi,

Just wanted to say congrats to your husband and good move. I have been

vegetarian for years and a year ago in March I went to the doctor and my blood

pressure was 175/90! I know, I couldn't believe it as I have always had good BP

prior. I am 53 and in good health and wanted to know why, what was causing it.

Had all the test, treadmill, echo etc and nothing out of the norm. He then

pulls out the pad and wants to put me on meds. I am not a med person and want

to try other options. So, when I left I moved to vegan, cut out the dairy and

really focused on plant based. But, what I found this is not enough. I also

increased my exercise. I am very active so I stepped it up. I wear a pedometer

every day and walk 10,000 steps and ride my mountain bike for and hour or more

at lunch on a hilly route. The exercise is key to keeping the bp in check. I

now average around 117/72. I can not stress enough how much the exercise plays

a part.

Good luck and enjoy. I am very lucky to live in CA where there is a farmers

market everyday somewhere nearby and I can always have fresh organic produce and

enjoy the seasons bounty as well as growing my own garden.

Enjoy
