Happy Cinco de Mayo!

To you as well Shawn and all who celebrate this day.

We went out to eat at La Burrita Mexican restaurant.

Living on the west coast we are fortunate to have

several such places in our town. They really

had the place decorated up and everyone was feeling

festive.:)

Hey, PT~ I am on the East coast, and we have many Mexican

restaurants in my town, too. Probably more than any other kind!

Hmmm, well, maybe neck-and-neck with Chinese take-out.

Little family run places where english is a second

language used only for us gringos? That's cool.

I am from back east (upstate NY) and we only had

Taco Bell or a chain called Chi Chis that served anything

Mexican-like. *lol*

Oh, no....no, no, no......I call them Rot-gut Bell !! We used to have

a ChiChi's but it went down many years ago.

 

We just moved, but where we were there was a great place around

the corner.....I don't read spanish, so I had some trouble, but

everything I ever pointed to was great! <ummm, gimme

that!>[yeah, I know that this got me with a non-veg meal often].

The cool thing is, where we are now, another one just opened up

last week a couple blocks up!! Haven't been yet, but looking

forward to it. There are several others here in Richmond, but I

havent been.

 

There are also *many* local family owned restaurants that use

english on the menu, which of course is less challenging for me.

LOL!

 

I *love* Mexican!! But hate those chain wanna-be's!!

Greetings! This is my 2nd day in the group and I am loving it. I wasn't

sure what I was going to have for Cinco de Mayo, but I think the Mexican

Manicotti sounds wonderful so I shall try it tonight.

Happy Cinco de Mayo!

 

 

I plan to celebrate the day by making some

delicious vegetarian TexMex food.

Everyone loves the Mexican Manicotti recipe,

so that is one dish we will definately have.

[that recipe is in our main dish recipe file]

It is such a filling dish that typically we eat it

with a green salad and some fresh fruit for dessert.

 

What's everyone else here doing for dinner tonight?

Oh yeah, before I space it, warm welcome to all of

the new members that have joined since yesterday.

Don't be shy! This is a friendly group and we are glad

you joined us. :)

My friends who are Vegetarian and mostly Vegan are throwing a Cinco

de Mayo festival (they've even made a pinata), so not sure exactly

what I'll be eating, but I know it's going to be a feast. Oh, and

I'll have Olive Oil cake for dessert.

Hi April.

I think you will love the mexican manicotti.

It is so easy to make and my kids often request it

and there aren't very many recipes that they both

like! *lol*

The best trick I have found for stuffing the uncooked

manicotti shells with the filling is to use one of those

small stainless steel baby spoons that I saved from

when my children were little.

i love any holiday that is celebrated with delicious food and drink.

For those of you who might not know much about the day, here
