Living on the west coast we are fortunate to have several such places in our town. We just moved, but where we were there was a great place around the corner.....I don't read spanish, so I had some trouble, but everything I ever pointed to was great! <ummm, gimme that!>[yeah, I know that this got me with a non-veg meal often]. The cool thing is, where we are now, another one just opened up last week a couple blocks up!! Haven't been yet, but looking forward to it. There are several others here in Richmond, but I havent been. There are also *many* local family owned restaurants that use english on the menu, which of course is less challenging for me. LOL! I wasn't sure what I was going to have for Cinco de Mayo, but I think the Mexican Manicotti sounds wonderful so I shall try it tonight. Thank you for the welcome!! It is so easy to make and my kids often request it and there aren't very many recipes that they both like! *lol* The best trick I have found for stuffing the uncooked manicotti shells with the filling is to use one of those small stainless steel baby spoons that I saved from when my children were little.
