I guess a little background is in order...

 

.... for those who I've not yet made the acquaintence of...

 

My name's Keith, I'm 30 yrs old, lived on my own since I was 18, the

past year I've been back with my parents as per their request due to

my father being ill, but his health is improving so I'll be out on

my own again in a month or two.

 

I've worked as a chef in a microbrewery, as well as a Jazz-Tapas

club. Living in Niagara Falls, Ontario, Canada, has exposed me to

years of working in the culinary industry... I've worked in two of

the busiest restaurants in north america, cooking of course. Talking

in the realm of pulling in 300,000 to 400,000 dollars profit per

day... so I'm used to the insanity of the industry.

 

Now, after an illness of my own, I'm preparing to go back to school

and keep my culinary skills for friends and dinner parties. I've

promised myself the next place I work in the culinary industry will

be either my own cafe, or nothing.

 

Luckily I've qualified for a few grants which may make that possble

in the next few years. It will be vegetarian, of course... and

hopefully at least 50% vegan:)

 

I am a buddhist- but to be honest, a lay buddhist. It's pretty hard

to be a complete buddhist without being a monk;) or so I've found.

So, I do what I can.

 

Don't let this frighten you off of me, but I am also a lifelong,

unwavering anarchist. *flinches* don't think I'm about throwing

bombs and stuff- Leo Tolstoy was a pacifist and a famous anarchist-

Gandhi was once quoted as saying 'I too, am an anarchist' and most

people have misconceptions about what anarchism really is- and they

would be surprised to find out that a very large percentage of

anarchists are total pacifists. It's not like how the media portrays

things.

 

That being said- I strive for pacifism in my life, but I have been

training in martial arts and meditating since I was 10 years old-

and in certain situations it has simply come about that using my

knowledge has prevented someone from being killed- so it's a karmic

juggling game to me... I guess you gotta take eack situation

individually.

 

Ah well.. I'm rambling...:) just wanted to introduce myself and say

hello again:D

I haven't got much time this morning to write a long post, since I

have to leave soon to do an 8K 'Fun Run'. But I will certainly do my

best later to explain what I do and how I got here. I can even work

in a food topic and/or recipes to keep it on-topic (sort of). Like,

what does a vegetarian forester eat for lunch in the woods? :)

I would starve to death if forced to use the real thing. But I would

Cool - chopsticks with training wheels! *lol* Linda, you may be

better off starting with something like this, 'cos I can only imagine

how difficult it will be to try to explain in words how to use

regular chopsticks. You may never want to try them again. ;)

i need a pancake recipe

 

I am looking for a tried and true pancake recipe that is dairy and egg

free and does NOT use soy milk or weird ingredients I can't find at a

normal grocery store.

 

I tried this one this morning and it was just plain gross, even my 3

yr old who eats everything took one bite and said " Dat's yucky! "

Try this site. I have a package of The Cravings Place All purpose Pancake

and Waffle Mix right in front of me. I don't know where you are but I think

you could find out at the site or order from them.It says on the site that

the pancake mix is $5.29 but I got it at Fred Meyer's for $1.99 on sale. It

doesn't use soy milk, just water. It is vegan. It is also gluten free, wheat

free and of course dairy and egg free. It might be worth a try, but have no

idea if your family will like it...mine does, but they had a dire craving

and sawdust might have done the trick if they could put syrup on it. LOL It

uses brown rice flour, white rice flour and other natural ingredients, but

it isn't organic unfortunately. I tried their chocolate chunk cookie mix and

it was pretty good, but a little dry for my taste. It is made here in

Oregon, Bend to be exact. It is wonderful for those with gluten, wheat or

soy intolerances and very nice for vegans too.

Indian Spinach Dip

 

This recipe is based on the Indian Spinach Dip recipe that was featured in this

month's edition of Vegetarian Times. When I read the recipe, I knew right away I

wanted to try it, since it features a few of my favorite things. I absolutely

adore avocados and fresh spinach, and of course anything with curry and ginger

intrigues me. It's a lovely full flavored dip for fresh veggies, or serve it as

a dressing over a fresh salad. It's also tasty with pita chips or tortilla

Indian Spinach Dip

4 cups fresh spinach (about 6 oz)

1 large avocado

1/2 c plain yogurt

1/2 tbsp lemon juice

1/2 tsp seasoned salt

1 small clove garlic, minced

1/4 tsp curry powder

1/8 tsp fresh ginger, minced

dash chili powder

dash cayenne pepper

dash cumin

 

Blend all ingredients in a food processor until smooth. Chill for an hour, and

then serve.

 

Enjoy!
