Popeye Veggie Burgers 10-ounce box of chopped spinach, thawed, lightly squeeze out water 1 large potato, peeled, diced, boiled and drained (don't boil until mushy) 1 med. onion, chopped finely 1 red or green bell pepper, finely chopped 1 cup french style green beans, frozen, thawed and chopped 2 garlic cloves, minced 1/2 tsp. paprika 1/2 cup BBQ sauce 1/2 cup bread crumbs 1 1/2 cups rolled oats 1 tsp. Mrs. Dash Dash of crushed red pepper flakes Place cooked potato and spinach in a bowl. Heat a little olive oil in a skillet and cook the onion, garlic, green beans and bell pepper until semi-soft, then add to the spinach and potato mixture along with balance of ingredients. Mix well and form into patties, brown patties in a skillet with a little oil until brown on both sides. Eat in wheat burger buns with your favorite garnish. *Note- when you mix add a little more BBQ sauce of dry or a little more bread crumbs if wet. Adjust seasonings.
