question for Christiane ~ Sofrito?

i was just reading your food blog, Christiane. i love to see the

beautiful pictures and recipes you try in there.

The recipe for Spanish Rice & Beans listed an ingredient i am

unfamiliar with: Sofrito. Is this a spice blend?

Thank you for the compliments!

Sofrito is a blend of green peppers, cilantro, and garlic, and is

used in quite a lot of spanish dishes. If you are unable to find it

in your local area, here is a link to a recipe for it (scroll to the

That was helpful, but a few more questions please.

How do you purchase this ingredient; does it come in

a jar as a dried seasoning, or in a can as a moist thick sauce?

Or do you just make your own each time from scratch?

It sounds from the recipe in the National Geographic link

to be a sort of vegetable mirepoix (mihr-PWAH).
