Donna Frankly Fake Feta Cheese 1 pound extra-firm tofu 1 cup -- water 1/2 cup light miso 2 tablespoons lemon juice or white wine vinegar 1 teaspoon -- salt Cut the tofu into slices or cubes. Combine the remaining ingredients to make a marinade, and pour over the tofu. Keep this refrigerated in a covered jar for up to three weeks, shaking the jar every day. Use in salads. Try this " feta " in salads and sandwiches, or just to nibble on by itself. You can also use low-fat tofu in this recipe and still get delicious results. Guest guest
Thank you, Marsha from my groups. This looks very easy. I might try this myself over the weekend. I have all of the marinade ingredients. Oh, also thank you " Cooking with PETA " . S. Guest guest
You know Marsha posted this a few months ago, I haven't tried it yet. Do you think a few rinsed smashed capers would add the saltiness as Linda suggested? I think so after I read the recipe again. Not sure, I know the miso is salty. I hope to hear the results soon (:- ) then I;ll try it. First I have a few more must tries this weekend. You're welcome, Donna , " ~ PT ~ " <patchouli_troll wrote: > > This sounds like a great substitute for feta. > Thanks for sharing it here. > > ~ PT ~ >
