I finally made a batch of coleslaw the way my Mom makes it, so I could try to write a recipe for it. So do understand that the ingredient measurements are not written in stone--please tweak! I think the main thing is that whatever mayo you use it shouldn't be the salad dressing style that is sweet. And I use more than a tsp of salt, but I'm a salt freak. Bad.....I know. Paula Creamy Lemon and Caper Coleslaw 1 head cabbage finely sliced and chopped 1/2 cup finely minced onion 1/2 cup lemon or lime juice 1 cup mayonnaise (I use lowfat mayonnaise with just a few Tbsp " real " mayonnaise mixed in for the flavor) 2 Tbsp capers slightly mashed and some of the juice from the caper jar 1 tsp salt and some shakes of black pepper Mix ingredients together and chill thoroughly. This sounds so good, Paula. i am a total coleslaw freak, especially now that the weather is hot and i am craving cool salads. i can't wait to try this. i enjoy putting coleslaw in veggie wrap sandwiches, and i even like it as a topping on veggie burgers and dawgs.
