12fl oz / 340mls water

4.5oz /128g wholemeal flour

3 rounded tablespoons soya flour

pinch salt

vegetable oil for frying

Pour water into blender, switch on and add dry ingredients

gradually. Whiz for about a minute. Leave in a cool place for at

least an hour; preferably overnight in the fridge.

Beat again just before using. If you want to use for fritters use

only 8fl oz/228mls water.

Fry on both sides in a very lightly oiled pan and serve while hot

with lemon juice and sugar or golden or maple syrup

Although personally i would use three quarters soya milk and one

quarter water for a more pancake-like consistency

I don't make them myself, but " How it All Vegan! " has one. you also might

be able to find one on Veggies Unite! (www.vegweb.com).

I'm getting the new book from the authors of HIAV. My sweetie bought it as

a Valentine's present, but it just got here this week! Hooray!

Hey Nikki,

That's a brilliant idea! When I was a vegetarian, a friend of mine made this book for me containing just pancake recipes. The book is shaped like a heart and sparkly but I've stuck it away never thinking that I could just "veganise" all the recipes inside! (Silly me!) Thank you for giving a cherished gift new life!!

Sorry if this is a repeat - I answered this once and it seems

has swallowed me post! :)

Thank you for your sweet reponse! :)

Actually, " veganising " recipes is how I got started. Tho Fraggle

always sent me great recipes and I could get them from vegweb, I

never really had a vegan recipe book until recently. So I found that

if I substituted in all my recipes, I could still enjoy all of my fav

foods!

So far, so great!

By the way, sounds like a very nice friend you have there! :)

Hi Jerrod

I went from the hacres diet to an all raw. Well, maybe the brazil nuts I bought

for the pancakes aren't truly raw. The batter was so thick that I was aftaid it

was going to ruin my turbo, it really buzzed.

These were right on par, just a bit more time and a different way of

I think I'll try this over the weekend. I usually replace 1/4 c of

flour with wheatbran, which makes me feel like I'm eating a little

healthier. Also, I try to fry up soysage or soy bacon, just to make

sure I get some protein. James isn't a huge pancake fan, but maybe

he'll like these, especially if they're large and fluffy.

I made them last night, to my old family recipe, with half a banana (for a

doubled recipe), six T. water, and about 3 T. flaxseed thrown in for good

measure. I mashed the naner with the water and mixed it in with the

" buttermilk " --which consisted of 2 c. soymilk and about 3 T. white vinegar.

I waited about five minutes to make sure it had curdled before I added it,

stirring it every now and then to " help it along " . Then I blended the naner

mixture real well with the " buttermilk " mixture, and added the dry

ingredients (unbleached flour, baking soda, organic sugar to taste). I found

about 1/2 stick of soy margarine in the fridge, so I melted 2 T. of it to go

last into the batter, and mixed it real well also.

My dh agrees with me that these pancakes were the highest risers thus far,

(even sans cow's milk!) and they were so tender and light too! I think the

thickness/fluffy ratio was about an inch. At LEAST an inch high. :>) And

sooo good. You could taste the banana, which might be a detriment to some,

but for us it was okay. After all, banana goes with so many things: maple

syrup, raspberry (jam), apple (butter), currants (preserves)--as a

complementary flavor. I even, briefly, considered chocolate syrup on my

stack last night <g>. But in the end, I went with apple butter. Dh had

raspberry jam on his, and no soy margarine; he said the pancakes were just

as tasty without as with, and since I love to have 'butter' on my pancakes,

he gave me the full share.

My doubled recipe made seven huge, IHOP-sized pancakes--which is the size dh

prefers. Otherwise it makes 12 or 14, or thereabouts. If anybody would care

to have the recipe, I'd be more than glad to post it.

Well, I hope everybody enjoys these. :>) I ate the last pancake as a snack

yesterday and it was very filling, sans anything--no soy margarine, no jam,

zilch! But very tasty on its own.

Denise has a good idea about adding bran. I wonder what it would do like if

I bought some Bob's Red Mill 10-grain cereal and substituted half of that

for the unbleached flour?

Hmmm.

HI Bron:

I would thinkg substituting 10-grain for half the unbleached flour would be

great. Sometimes I add a spoonful of Peanut Butter to my batter.

This sounds tasty, Anna. Is this egg replacer made from something

other than potato flour?

I think this came up on the list some time back, but since we just ate them

this morning thought I would put it up again for those that are craving

pancakes or waffles. These are from " The Cravings Place " and are gluten,

wheat, dairy and egg free. They tasted wonderful and there were four of us

who are very difficult to please. You just add water. It says on the package

that it is not pre-sweetened. I got it at Fred Meyers and they were on sale

for $1.99. It took just a minute to mix them since you just use the package

mix and water. Oh, yes, they are vegan.

I fear that pancakery is going to be a little overdone in our neck of the woods.... we had our usual lot when spring arrived about a weak ago... then, yesterday, we discovered that Cafe Kino (our local, exceptionally good, vegan cafe) are doing "all you can eat pancakes"on Friday evening... and then Jo went and sent those recipes for chocolate and strawberry pancakes, so we can't ignore them!!!!

Traditionally its served with sugar & lemon, as a sweet dessert, but you can make whatever you like. My favourite when I was little was pancakes with stewed apple inside them ( not rolled up, but actually inside them ) never figured out how my mother did that...........

Then theres pikelets.............the savoury version...........

Did anyone have pancakes for Pancake Day?On Saturday, we had gram flour pancakes filled with a broccoli curry mix. It was very nice. As we were busy at the weekend we didn't get time to do sweet pancakes though - have to have them another time.JoReal knowledge is to know the extent of one's ignorance. Confucius

Hi Fraggle

I believe in the US, what you call pancakes is what in the UK we call "Scotch Pancakes". Our pancakes are much flatter than yours, and tend to have a bigger circumference!
